Thai Peanut Air Fryer Tofu Recipe

Ingredients: 1 block firm tofu (14 oz), 2 tbsp peanut butter, 1 tbsp soy sauce, 1 tbsp lime juice, 1 tbsp honey, 1 tsp sesame oil, 1 tsp grated ginger, 1 garlic clove (minced), 1/4 tsp red pepper flakes, 1 tbsp cornstarch, 1 tbsp vegetable oil, chopped peanuts and cilantro for garnish. Instructions: Press tofu between paper towels with a heavy object for 20 minutes to remove excess water. Cut into 1-inch cubes. In a bowl, whisk peanut butter, soy sauce, lime juice, honey, sesame oil, ginger, garlic, and red pepper flakes until smooth. Toss tofu cubes in cornstarch to coat lightly. Preheat air fryer to 400°F. Place tofu in a single layer in the air fryer basket, drizzle with vegetable oil, and cook for 10-12 minutes, shaking basket halfway, until golden and crispy. Remove tofu and toss in the peanut sauce until evenly coated. Return to air fryer for 2-3 minutes to set the sauce. Garnish with chopped peanuts and cilantro. Serve hot over rice or with veggies.
