Poached Salmon with Cucumber Salad 🐟🥒

Ingredients:
• 2 lemons
• 2 garlic cloves, peeled
• 1 yellow onion, quartered
• 1.1 lbs. salmon filets
• 3.5 oz. Greek yogurt
• 1 cucumber, thinly sliced
• 4 green onions, sliced
• 0.7 oz. fresh dill, chopped
Instructions:
1. Juice one lemon, slice the other.
2. In a pot, add water, olive oil, garlic, onion, lemon slices, and salt. Bring to boil, simmer 6 mins.
3. Season salmon, add to pot, simmer 5-6 mins.
4. Combine cucumber, yogurt, lemon juice, green onions, dill in a bowl. Season with salt & pepper.
5. Serve salmon with cucumber salad, garnish with green onions.
