**Asian Mushroom Noodles Stir-Fry 🍜**
**Ingredients:**
- 4 tbsp tamari
- 2 tbsp rice vinegar
- 2 tbsp maple syrup
- 2 tbsp toasted sesame oil (divided)
- 1 tbsp gochujang
- 8 oz oyster mushrooms (or shiitake)
- 4 oz rice noodles
- 4.2 oz carrots (julienned)
- 6 green onions (cut into 1” pieces)
- 12 oz baby bok choy
- 2 tsp toasted sesame seeds (for garnish)
**Instructions:**
1. Mix tamari, rice vinegar, maple syrup, sesame oil, and gochujang in a bowl. Set aside.
2. Remove mushroom stems and cook noodles as per package instructions.
3. Heat 1 tbsp sesame oil in a pan. Stir-fry mushrooms for 7 mins, then set aside.
4. Stir-fry carrots, green onions, and bok choy for 2 mins.
