Herby Green Risotto
Serves: 6 | Time: 45 mins
Ingredients
• 2 onions, diced
• 3 cloves garlic, minced
• 4 celery stalks, chopped
• 14 oz. risotto rice
• 1 broccoli, florets sliced
• 2 pt. vegetable stock
• 2 zucchinis, grated
• 7 oz. frozen green peas
• 3.5 oz. vegan basil pesto
• Splash of almond milk (optional)
Instructions
1. Heat 1 tbsp olive oil in a large pan. Cook onions, garlic, celery & salt for 5-10 mins.
2. Add rice & broccoli, cook for 2 mins.
3. Gradually add stock, stirring until absorbed (20-25 mins).
4. Stir in zucchini, peas, & pesto. Heat through.
