🥗 Mediterranean Chicken & Quinoa Bowl

This Mediterranean Chicken and Quinoa Bowl is your next go-to meal prep recipe—simple, hearty, and totally crave-worthy.

Ingredients:
• 4 oz quinoa (uncooked)
• 8.5 oz chicken breast
• 1.5 oz sun-dried tomatoes (in oil)
• 1 garlic clove
• 1 tsp oregano, ½ tsp paprika
• 1 red bell pepper (diced)
• 2 oz spinach
• 7 oz cherry tomatoes (halved)
• Olive oil, salt & pepper
Steps:
1. Cook quinoa, set aside.
2. Blend tomatoes, garlic, oil & spices → marinade.
3. Rub chicken in marinade, let sit 10 mins.
4. Grill chicken 7–8 mins per side.
5. Toss veggies on pan, sauté 5 mins.
