Baked Cottage Cheese Tomato Fritters š§

Ingredients:
ā 14 oz cottage cheese
ā 2 oz sun-dried tomatoes, chopped
ā 2 garlic cloves, crushed
ā 2 green onions, sliced
ā 0.2 oz fresh basil, chopped
ā 1 egg
ā 1 tsp herbes de Provence
ā 5.3 oz spelt flour
ā Salt & pepper
Salad Side:
ā 3.5 oz mixed greens
ā 5.5 oz cherry tomatoes
ā 1 tbsp balsamic vinegar
Instructions:
