Creamy Coconut Udon with Mushrooms

Ingredients:
• 10.6 oz firm tofu, pressed & cubed
• 3 shallots, sliced
• 2 garlic cloves, crushed
• 2 cm ginger, grated
• 7 oz mushrooms, sliced
• 3 tbsp brown rice miso paste
• 14 fl oz lite coconut milk
• 1 pt hot vegetable stock
• 3.5 oz dry udon noodles
• 5 oz baby spinach, chopped
• Lime zest & juice
Instructions:
1. Sauté tofu in oil until crispy. Set aside.
2. In a wok, sauté shallots, garlic, ginger, and mushrooms for 8-10 min.
3. Add miso paste, coconut milk, and stock. Bring to a boil.
