Fat came out of food, and to make it

And people started looking for a new

The idea is a little something like

this. You eat carbs, your blood sugar

mechanism behind the idea is real.

world, and we have tested it a lot. But,

before we get into the evidence, let's

talk about some real-world [music]

population data. Because this is where

fall apart very quickly. According to a

doubled since 1990. So, obesity is

clearly a growing public problem. But,

it's not growing evenly. Japan has one

of the lowest obesity rates of any

developed country in the world at less

than 5% of the population. Compare that

to the UK at around 28% or the United

States at 40%. That's a massive

difference. Now, here's the interesting

part.

Japan also has one of the highest

carbohydrate intakes of any [music]

developed nation. Because carbs make up

about 57 to 60% of total energy intake

based on Japan's [music] National

Nutrition Survey data. On the other

hand, adults in the US get around 46 to

47% of their energy from carbs, and the

[music] UK is pretty similar. So, the

developed country with one of the

highest carbohydrate intakes has a

countries eating a lower proportion of

carbs. Now, it's also worth pointing out

that the average Japanese person

consumes on average around 240 fewer

American. [music] And that, as we'll

see, is going to help explain what's

going on. To really understand why the

hold up, I want to take you back to the

1940s. Because there's a story from that

era that I think is pretty cool, and it

directly goes against everything the

low-carb world would have you believe.

Walter Kempner was a physician working

at Duke University in North Carolina.

He'd been developing a treatment for

patients with severe high blood pressure

and kidney disease, conditions that in

those days were often a death sentence.

All of these patients also had

overweight or obesity, and today we'd

class them as having metabolic [music]

syndrome. The treatment he came up with

was, to put it mildly, unusual. He put

his patients on a diet that was almost

entirely white rice and a little fruit.

That's it.

White rice, fruit, fruit juice, and a

little sugar, funnily enough. No meat,

no dairy, very little salt, and almost

on this diet came from carbohydrates. If

most people in the fitness world today,

they'd have it straight back to you and

tell you it was going to send their

unexpected happened. Not only did

patients' blood pressure improve

dramatically, they also lost significant

amounts of body weight, consistently

across hundreds of patients, published

across multiple studies throughout the

and into the 1950s. Now, Kemper wasn't

trying to create a weight loss diet.

That was more of a side effect, but a

side effect that was hard to ignore.

[music] The diet, built almost entirely

on carbohydrates, the very macronutrient

that supposedly drives fat storage and

weight gain, was producing reliable,

meaningful weight loss in real patients.

And the reason,

is a pretty cool story, but it was done

running controlled experiments. So,

let's look at what happens when you test

this a little more scientifically. One

of the best controlled studies comparing

high-carb and low-carb diets was run by

Kevin Hall at the National Institutes of

Health in the US. His team took 19

metabolic ward, meaning they lived in

monitored with incredible precision.

Both groups ate the same number of

The only difference was the ratio of

Well, the low-carb group saw their

sugar?" Because sugar is different,

right? Fructose in particular gets a lot

of attention because, unlike glucose,

it's metabolized [music] primarily in

the liver, and at high doses in animal

studies, it can cause all kinds of

metabolic [music] problems. So, the idea

is that sugar causes weight gain through

some sinister mechanism that operates

completely separately from calories. It

sounds logical, right? So, let's look at

what the evidence actually shows. A
