**Ingredients:**
- 14 oz firm tofu, cubed
- 2 tbsp cornstarch
- 1 onion, diced
- 2 garlic cloves, minced
- 2 tbsp tomato paste
- 1 tsp cumin, coriander, paprika, ½ tsp chili powder
- 4 fl oz vegetable stock
- 4 corn tortillas
- 4 tbsp cilantro, ½ red onion, sliced
**Instructions:**
1. Preheat air fryer to 390°F (200°C).
2. Toss tofu with cornstarch, 2 tbsp oil & ½ tsp salt. Air fry for 20 mins.
3. Sauté garlic & onion, then add tomato paste & spices. Cook 30 secs.
4. Add stock, deglaze & reduce until thick. Add tofu and coat.
5. Assemble burritos with tofu, cilantro, and onion.
