0:00
hey welcome to the freeze dry business

Channel where we talk about freeze
0:03
drying as a business whether you're
0:04
Cottage food or your licensed commercial
0:07
kitchen owner my name is David let's get
0:09
started well thank you for joining me on

0:18
I'm producing for you so we can all join
0:20
in the community of freeze-dried
0:22
business owners also if you like this
0:23
video it helps with the YouTube
0:25
algorithm to just get the video up and
0:27
running make sure people who are
0:28
searching for how to freeze dry can find
0:30
my videos freeze-dried ice cream
0:31
sandwiches become crunchy and really
0:33
enhance the flavor once you take a bite
0:35
these have been a real big hit for my
0:37
customers both wholesale and direct a
0:39
quick overview of what you can expect
0:40
from this video is we'll go over the
0:42
tools that are needed to do ice cream
0:44
sandwiches I've set out what we needed
0:46
on this table here in my commercial
0:47
kitchen and that way you can see how to
0:49
do ice cream sandwiches for yourself
0:51
we're going to go through the process of
0:53
what I do I'll also show you the
0:54
settings of what I use for the freeze
0:56
dryer if you're interested in purchasing
0:57
any of the tools that I use in this
0:59
video go go ahead and use the link in
1:01
the descriptions below and that'll take
1:02
you to Amazon directly to the tools
1:09
the drain valve so that it starts
1:10
freezing right now it's at 22 degrees
1:13
which is perfect this allows us to cut
1:16
the frozen ice cream sandwiches into
1:18
pieces put them on the tray and then
1:20
immediately put them in the freeze dryer
1:21
that's already Frozen all right let's go
1:23
ahead and take a look at the freezer
1:26
here is the ice cream sandwiches I use
1:29
the polar Treats Ice Cream Sandwich bars
1:33
Neapolitan these have been great there's
1:35
12 bars in a box I also pre-freeze the
1:38
trays so that they remain Frozen and
1:40
cold so that nothing else impacts once
1:43
we start cutting the ice cream
1:44
sandwiches okay before we get the ice
1:46
cream sandwiches out of the boxes I want
1:48
to show you what the setup is it's
1:49
really straightforward I've got a really
1:51
great knife this is an old antique knife
1:54
sharpener but if you'd like to buy a new
1:56
sharpener I've got a link in the
1:58
description of this video linked to
2:00
Amazon for you to buy one I have a
2:02
cutting board I also have nitrile gloves
2:05
which are food safe for us to wear while
2:08
we're cutting the ice cream sandwiches
2:09
so let's go get a frozen tray and a box
2:11
of ice cream sandwiches all right so
2:13
we've got ice cream sandwiches in this
2:15
box there's about 12 ice cream bars just
2:17
like I did with ice cream this is a very
2:19
quick process you have to be very quick
2:21
and efficient and if you start noticing
2:23
that it's getting soft go ahead and
2:24
switch to another box that's in the
2:26
freezer this is a pre-frozen tray so
2:28
we're going to be really quick about
2:31
your knife cut open the ice cream
2:33
sandwiches I hold the Ice Cream Sandwich
2:36
like this with my thumb right on the
2:39
side and my fingers like this
2:41
kind of hard to explain and then I
2:46
down the side and that unwraps the ice
2:55
I get the entire Ice Cream Sandwich out
3:00
Palms to the side and slicing open okay
3:04
so we're going to take out another three
3:09
cut the wrappers again we're just going
3:13
right down the middle and cutting open
3:14
then we're going to quickly unwrap
3:22
a skill that you'll develop over time to
3:26
get more quicker I can do ice cream
3:28
sandwiches all five trays all cutted and
3:31
everything in about 30 minutes again I'm
3:33
cutting length weighs down the three
3:35
individual ice cream sandwiches
3:38
and then I'm cutting four times
3:41
down the middle so I can get eight
3:44
individual pieces down there
3:46
cut so again here's the tray
3:50
okay I've got six bars on there so far
3:53
I'm gonna take another two
4:07
make sure you have a sharp knife when
4:10
you're cutting these open
4:13
we're cutting down in the middle
4:21
we're sticking them on the trays five
4:23
across and we're just doing five all the
4:26
way down so there can actually be 20
4:28
bars on each tray if you maximize the
4:34
to fill out the rest of this tray
4:36
and again the freeze dryer is already
4:39
so right now it's at about 16 degrees
4:42
which is perfect and that way by the
4:45
time we're done with all five trays
4:50
about zero degrees and then that just
4:53
cuts down your cycle time so that by the
4:56
you're closing the drain valve and
4:58
getting everything done
5:00
you'll be off and running to get the
5:02
cycle started and the pump started so we
5:04
can start the drying process put the
5:07
again this is an entire box of 12 ice
5:11
cream bars I've already done 10 on the
5:16
you can make these ice cream bars as big
5:18
as you want but I usually just do eight
5:22
so that's so far so we're going to stick
5:24
this in the freeze dryer right now
5:27
so the process of doing the ice cream
5:29
sandwiches on the trays is do your first
5:32
tray first put it in the freeze dryer
5:34
it's already at 14 degrees go get
5:36
another Frozen tray and another box of
5:38
ice cream sandwiches do exactly what we
5:40
did which we did all 12 bars we put that
5:43
into the second tray area then the third
5:46
then the fourth and the fifth once it's
5:48
all full go back to that first tray
5:50
which has already been frozen in the
5:52
freeze dryer so far and we can start
5:54
filling the rest of the tray and
5:55
maximizing it and then go all the way up
5:58
and that's how the whole process will go
5:59
with ice cream sandwiches okay here we
6:02
go we're going to start another box of
6:04
ice cream sandwiches we've already got
6:06
the Frozen tray this is tray number two
6:08
we're gonna start with three ice cream
6:10
sandwiches the reason I don't do four is
6:13
because the length of my knife I like
6:15
being able to get a full cut when I cut
6:16
down and it's about three Ice Cream
6:20
so again we're just cutting open the
6:22
bars first from the wrapper
6:25
and you know sometimes when the wrapper
6:28
sticks you just got to be tedious and
6:29
you got to just take it off but you can
6:31
be really quick the more Frozen that
6:33
these Ice Cream Sandwich bars are from
6:36
the start they're going to be easier to
6:41
and I just turn it and create four
6:44
separate bites whoops
6:47
and then I take the whole block and put
6:51
some people freeze dry with the wrappers
6:53
on I haven't found that to be too
6:55
effective when I've been trying to cut I
6:57
like cutting them prior to because
6:59
they're just softer and they don't
7:02
create too many crumbles because once
7:04
they're freeze-dried it's all crunchy so
7:06
I like having it being able to to cut
7:08
these and it's really not that
7:10
difficult to do so you might be asking
7:13
yourself how much are the ice cream
7:16
well last year when I was doing ice
7:20
each one of these boxes costs about
7:22
three dollars and 48 cents after the
7:25
inflation for this year they're now at
7:28
4.86 definitely inflation has impacted
7:32
all of our pricing across the country
7:35
but I still have pretty good margin with
7:38
these I love you that have watched a lot
7:40
of my videos you've been asking about
7:43
really what I look at is I go to Etsy I
7:46
go to some of my competitors from other
7:49
states and I just look to see what other
7:51
people are pricing per ounce that's what
7:54
I think everybody should do it you don't
7:56
need to really reinvent the wheel and
7:59
do something crazy all right so that's
8:02
trade number two as again that's 12 Ice
8:04
Cream Sandwich bars that we're putting
8:07
into the freeze dryer freeze dryer
8:57
all five trays are done so again we did
9:01
one box of Ice Cream Sandwich bars there
9:04
were 12 bars in each box and we did all
9:06
five trays starting with the bottom one
9:08
and then we went all the way up to the
9:10
top now we're gonna go back to the
9:13
bottom one because it's already been
9:14
frozen at 10 degrees already so now
9:17
we're going to take another box of Ice
9:19
Cream Sandwich bars and finish it off
9:21
again I said there's there's probably
9:23
about 20 Ice Cream Sandwich bars that
9:25
can fit on one tray all eight boxes with
9:29
12 bars each in them will fit on all
9:32
five trays so let's go ahead and get
9:34
another tray and I'll show you how the
9:35
final trade would look with all the ice
9:37
cream bars in like I said we have our
9:39
first tray in it's the last tray out now
9:42
that we're putting it in and we've got
9:44
the tray all we need to do is fill the
9:47
so we got the Ice Cream Sandwich Box
9:51
and we've got room five more bars so
9:55
we're gonna put the three ice cream
9:56
sandwiches on this row that we only did
10:03
I'm gonna cut down five times
10:08
and again if they get rearranged a
10:11
just kind of tied them back together
10:12
then we're going to place them on the
10:14
tray nice and snug if you've never done
10:16
Ice Cream Sandwich bars definitely do it
10:19
for 2023 this is a great product to add
10:21
if you can do it under your health
10:24
districts guidelines for cottage food or
10:27
you might have to get into
10:28
a licensed commercial kitchen either by
10:33
you can always rent so I'm going to put
10:36
this to the side a little bit and it's
10:38
okay that it's raised a little bit I
10:40
have it raised just a little bit like
10:42
that and that's okay it'll still fit
10:44
underneath the tray in this in the
10:46
freeze dryer I think I can fit two more
10:51
so let's let's do that
10:56
I really do try to make everything work
10:59
to maximize the amount of product that
11:01
you're putting on the trays because
11:04
yes it takes a little bit longer but I
11:06
like having as much as I can because
11:08
then I don't have to do more
11:10
later on there we go so let's put that
11:13
back in the freeze dryer next tray out
11:17
go ahead and get the ice cream bars out
11:20
remember to be quick about this it's
11:23
definitely hard to be quick sometimes
11:24
when I'm trying to think of what to talk
11:28
you know I've been watching a lot of
11:29
YouTube channels and people doing
11:33
content for YouTube and
11:36
I just want you guys to know it's
11:39
it's actually a lot more difficult than
11:40
you think you know I want to provide the
11:44
information possible
11:47
for anyone who is owning a freeze-dried
11:49
business while I'm doing this but
11:52
I also got to be quick about it and I'm
11:54
doing product that I'm going to sell so
11:58
having all these camera angles and
12:00
everything it's kind of crazy alright so
12:02
all five trays are now in the freeze
12:04
dryer looking good that's about eight
12:07
boxes with 12 bars each so there's 20 or
12:11
so bars on each different individual
12:13
tray these are fairly easy to do check
12:16
with your local health district to make
12:18
sure you can do them under your college
12:19
food law or if you're in a licensed
12:21
commercial kitchen or you're sharing
12:22
kitchen like me then you can obviously
12:25
submit to get those approved my health
12:27
district required me to test my dairy
12:29
products like ice cream so I did have to
12:31
go through that process it wasn't very
12:33
expensive it was about 18 to 20 dollars
12:36
per test and that just showed the
12:37
activity level of a freeze-dried Ice
12:39
Cream Sandwich Bar or freeze-dried ice
12:42
cream and that way it got passed and
12:43
then I can sell it under my food
12:46
establishment permit so I said at the
12:48
beginning of the video that I would talk
12:49
to you about the settings for the freeze
12:51
dryer I don't change any settings I only
12:53
set it to what the set factory settings
12:56
are which is 125 degrees I let it run a
12:59
full cycle and then usually it takes
13:01
between 28 to 36 hours to do for all
13:05
five trays hey thanks again for watching
13:07
through the end of this video this is
13:09
the final product of an ice cream
13:10
sandwich it becomes hard and crunchy
13:13
just like a cookie the flavor hits you
13:16
immediately rather than wait for all
13:18
these trays to finish I just figured I'd
13:19
show you the final product from a
13:21
previous batch and usually I'm able to
13:23
get about 45 bags putting about 2.5 net
13:26
ounces in all the bags if you want to
13:28
support me please subscribe to my
13:30
