0:00
hey welcome to the freeze Drive business
0:01
Channel have you ever wondered why
0:03
certain candies that have chocolate in
0:05
it just don't freeze dry well in today's
0:07
video I'm going to share with you a
0:08
candy that does have chocolate in it and
0:10
it does freeze dry well and it is one of
0:13
my top sellers for my freeze-dried
0:14
business and you should add it too let's
0:21
hey welcome back to the freeze-dried
0:22
business Channel my name is David I run
0:24
a freeze dry business in Idaho if you're
0:26
running a freeze-dry business or you
0:28
want to start one this channel is for
0:30
you I'm trying to connect the freeze dry
0:32
business Community with the tools and
0:34
resources needed to grow a sustainable
0:36
business and that's what these videos
0:37
are all about now I've been absent for a
0:39
couple of weeks reason being I do have a
0:41
full-time job on top of this side hustle
0:43
business that I'm trying to grow and so
0:45
sometimes that just gets in the way of
0:47
video production and things that I need
0:48
to get done in today's video we're going
0:50
to be doing Charleston shoes this is one
0:52
of my top 20 selling freeze-dried items
0:55
that I have if you want to check out
0:56
that video it's on my channel usually
0:58
chocolate doesn't freeze dry well it
1:00
doesn't have much moisture so really it
1:02
just ends up melting but like caramel M
1:04
M's and Milk Duds the caramel that is
1:07
inside the chocolate when you freeze dry
1:10
it that actually allows it to have kind
1:13
of that popping texture and then you're
1:16
able to maybe like put it into the
1:18
freezer and that candy is able to harden
1:20
up and the chocolate doesn't melt right
1:22
away now if you're not familiar with the
1:23
Charleston chew this is one of the more
1:25
expensive type of candies that you're
1:27
going to purchase because they don't
1:29
sell these in bulk like they do at other
1:30
types of stores like Costco and things
1:32
like that so you're really going to have
1:34
to go onto Amazon I've got a link in the
1:35
description to buy Charleston shoes now
1:37
this is a 30 ounce bag it has about 120
1:41
of the Charleston Chews in these little
1:44
wrappers so in today's video I'm going
1:46
to show you how to kind of quickly
1:47
unwrap it as best as I can I'll cut it
1:50
for you I'll show the different sizes
1:51
that I cut them in up until this video
1:53
I've only done this size of the
1:55
Charleston shoes with the wrappers but I
1:57
found that through some of the forums a
2:00
lot of people are liking these
2:01
Charleston shoes rollers because they're
2:03
just little balls and you can put them
2:05
on the tray there's no unwrapping or
2:07
anything of that type of nature so I'm
2:09
gonna do in this video both the rollers
2:11
for the first time and then I'm also
2:13
going to do the Charleston shoes with
2:15
the wrappers so let's talk about the
2:17
freeze dryer settings I usually don't
2:19
change up the temperatures too much
2:21
above 140 degrees or so so I'm going to
2:24
press customize because I've got the
2:25
latest software with candy mode I'm
2:27
going to increase the drying temperature
2:30
to 140 and then I'm going to do the
2:33
extra dry time that's the time that it's
2:35
actually going to do the freeze drying
2:37
for the candy I'm going to set it to
2:39
three hours this time now here's the
2:41
hint about Charleston's shoes it does
2:42
have chocolate in it so if you take it
2:45
out too early when it's at that 140
2:47
degrees or even around 100 degrees once
2:50
it's finished with its cycle you're
2:51
going to still have it be melty and it's
2:54
going to have a probability of it
2:56
melting with it in your bucket and in
2:58
your bags so what I found best with
3:00
Charleston shoes is I leave it in the
3:02
freeze dryer or I take it out and put it
3:04
in the freezer all the trays and let it
3:07
freeze over and then I store it in my
3:09
buckets or immediately bag it so that's
3:11
my tip for you is don't take it out
3:13
immediately and if you do put it in the
3:15
freezer all those trays so that the
3:17
chocolate hardens up and then you have
3:19
an intact Charleston juice and I'll show
3:21
you what that looks like alright so the
3:23
for the prep tools and everything that
3:24
you're going to need for Charleston
3:25
Chews is really simple all I've got is a
3:28
knife because we're going to take the
3:29
wrappers and we're going to cut those so
3:31
what I'm going to do for these rollers
3:32
for the first time is I knew that they
3:34
had they came in little balls so rather
3:37
than pour them all on the tray and have
3:39
them scatter about on the tray and have
3:41
them all maybe touch is I'm going to put
3:46
all in these different molds this is the
3:48
Harvest Right tray molds that you can
3:50
buy on the website I've got a link in
3:52
the description of this video if you
3:54
want to buy these molds
4:05
so I got every single ball on one tray
4:07
with the tray molds that's pretty nifty
4:09
I had three left all right so now we're
4:11
going to do the Charleston shoes that
4:13
have wrappers on them now I'm going to
4:14
put gloves on the chocolate and
4:18
sticky over time and I just it ends up
4:21
just getting a mess on my hand I did
4:23
pre-freeze and I put my Charleston Chews
4:26
bags in the freezer now the reason being
4:29
is because over time that I've done this
4:31
if it's at room temperature or whatever
4:33
it just adds a little bit more of the
4:36
stickiness to the wrapper so when you
4:38
freeze it though I found that the
4:40
wrappers come apart more easily and
4:43
again it's about speed and efficiency
4:44
when it comes to freeze drying as a
4:46
business and cutting these candies now
4:48
what I'm going to do is I'm going to cut
4:50
these in half and then I'm also going to
4:51
cut them in thirds because there's just
4:54
different types of bite-sized pieces
4:58
that you want to choose for your
5:00
customers with different candies in your
5:03
freeze-dried business the reason we're
5:05
cutting them in different sizes is
5:06
because if you were going to create your
5:09
own candies you wouldn't want them to be
5:11
just gigantic right I mean the Jolly
5:13
Ranchers are really fun if you do them
5:15
in their full size but it's not
5:17
manageable to put them into a bag to
5:19
sell so that's why we're going to do
5:20
more of the smaller pieces and we're
5:23
going to make them more bite-sized I'm
5:25
going to unwrap all of these Charleston
5:27
shoes and then I'm going to put the
5:29
chocolate on here that's unwrapped and
5:32
then we'll arrange it on the tray so you
5:33
can kind of see how many you can put on
5:35
the tray as you can see here
5:38
I'm literally pushing up and it gets out
5:40
the chocolate without it sticking and
5:43
again you saw that it didn't stick to
5:45
this wrapper and that's because I
5:48
pre-froz it this is the tedious part
5:50
about freeze drying as a business
5:53
especially if you're going to do candy
5:55
like this it's a lot of fun freeze
5:57
drying but it does take time to prepare
6:00
all of this candy you have to cut it you
6:03
have to arrange it it just takes time
6:08
is it worth it absolutely because
6:11
if you're doing it as a side hustle you
6:14
know hey you know you don't have huge
6:16
amounts of overhead you can kind of
6:18
price the way you want to but as soon as
6:20
you start getting into wholesale and you
6:22
have people asking for bulk items things
6:26
like that you got to figure out your
6:28
margins you got to figure out how much
6:29
time you're going to dedicate
6:31
to doing stuff like this and I only do
6:35
these Charleston Chews really maybe once
6:38
a month and I just do a couple of these
6:40
bags like you're seeing here
6:54
okay so let's take a look at this tray
6:58
and let's see what the arrangement is
7:00
Okay so we've got six and then let's
7:03
calculate how much we got down in
7:04
another row one two three four five six
7:07
seven eight nine ten eleven twelve six
7:10
times twelve I'm not a math whiz but it
7:17
72 half pieces in here so that's 36
7:20
individual Charleston shoes that we cut
7:24
so you need to have 36 on here let's do
7:27
120 because it's 120 in the bag divided
7:32
by 36 is three so we can actually do
7:36
three trays three and a quarter trays of
7:40
Charleston shoes out of 120 count plus
7:43
we've already got the one in the rollers
7:44
so for the purposes of this video I just
7:47
wanted to show you the arrangement of
7:49
this now do them cut in thirds
8:06
thank you Okay cool so let's count these
8:09
up right now so we've got one two three
8:12
four five six seven okay so seven right
8:15
there one two three four five six seven
8:18
eight nine ten eleven twelve thirteen
8:20
gonna get my handy calculator out on my
8:22
phone thirteen times seven so I got 91
8:28
pieces on here 91 divided by three again
8:32
30 30 pieces that we did here all right
8:36
so we've got three trays in the freeze
8:37
dryer so now I'm gonna just do the next
8:39
two off camera and then we'll check the
8:42
freeze dryer once it's all done all
8:43
right the Charleston shoes are done now
8:45
what I did is I actually ran this
8:47
overnight so I let it chill all the way
8:50
down to about negative 20 degrees and so
8:55
I'm just pressing warming the trays I'm
8:56
not going to warm it very much I'm just
8:58
going to warm it to about maybe zero
8:59
degrees or so just so it's not super
9:02
cold when I take it out of the freeze
9:04
dryer and then we'll take a look at the
9:06
finished product Oh all right let's take
9:08
a look at the Charleston shoes this is
9:10
what I love about this Charleston shoes
9:13
now look at this this puffs up this was
9:16
the cut in half size as you can see the
9:19
chocolate once you freeze it it actually
9:21
doesn't uh melt and things so that's why
9:24
I say you got to make sure you like
9:26
freeze it either in the freezer or just
9:28
let the freeze dryer freeze it back
9:30
let's see what these Charleston Chews
9:33
rollers did wow that's awesome look at
9:36
yeah it basically turned out about the
9:39
size is some of the thirds that we did
9:42
for the Charleston shoes so awesome
9:44
let's take it out now this is what's so
9:46
great about the Charleston shoes is the
9:48
texture has changed the chocolate is now
9:50
not melted it's all around the the
9:54
marshmallowy type of candy
9:59
it literally is just like a vanilla
10:01
marshmallowy like Whopper that's how I
10:04
would describe it now I chose to do
10:06
these molds because with the rollers I
10:08
just didn't want it rolling around and
10:10
each individual piece so what I'm going
10:13
to do is I'm just going to kind of Pop
10:15
these out and I'm just going to put them
10:17
back on the tray as I'm seeing right
10:19
here and I don't know if you can see
10:21
this from the angle here I'll zoom in a
10:23
little bit it's definitely kind of
10:25
creating a little bit of breakage if
10:29
that's even a word so it's kind of
10:31
popping out as I'm popping out the
10:33
silicone mold here so it's definitely
10:36
kind of crumbling the Charleston Chews
10:39
not really liking this so you're kind of
10:41
seeing this for the first time so my
10:44
thought process of like you know hey
10:46
making this individual it may not have
10:48
been the best idea I'm not really liking
10:50
to be honest because it's just taking
10:52
more time for me to to get these open
10:54
and what I would recommend based on this
10:56
first experience because this is the
10:57
first time that I did the Charleston
10:58
shoes rollers I would not use these mats
11:01
because I don't like how it's kind of
11:03
crumbling the product and therefore I'm
11:04
not going to package it because it just
11:06
doesn't look right hey thanks for
11:07
watching another video I'll keep it
11:08
