Ingredients**:
- 4 cups chicken or vegetable broth
- 1 stalk lemongrass, cut into 2-inch pieces and bruised
- 3-4 kaffir lime leaves, torn into pieces
- 3-4 slices galangal (or ginger if unavailable)
- 2-3 bird's eye chilies, crushed
- 1 cup mushrooms, sliced (like button or straw mushrooms)
- 1/2 pound shrimp, peeled and deveined (or chicken if preferred)
- 2-3 tbsp fish sauce
- 1-2 tbsp lime juice
- 1-2 tsp sugar
- 2 tomatoes, cut into wedges
- Fresh cilantro, chopped (for garnish)
- Optional: Thai chili paste or roasted chili paste (Nam Prik Pao), to taste
