Ingredients for One Pata:
! whole pork leg(pata), around 2 kg, cleaned and hair removed
3/4 cup soy sauce
2 tbsp brown sugar
4 pcs yellow rock sugar(optional)
4 tbsp rice wine or shaoxing wine
2 tbsp sesame oil
2 star anise
3-4 cloves garlic, minced
3 bulbs green onions
4 slices ginger
2-3 pcs bay leaves
1/2 tsp whole peppercorns
4 tbsp cornstarch mixed with 4 tbsp water(for slurry)
! liter water or enough to cover the pork leg
salt and pepper to taste
optional vegetables:bok choy, carrots, napa cabbage, kangkong
