Ingredients:
2 large eggplants
2 large eggs
Salt and pepper, to taste
2 tablespoons cooking oil
Instructions:
Grill the Eggplant:
Roast the eggplants over an open flame or on a grill until the skins are charred and the flesh becomes soft. This takes about 10-15 minutes. Allow them to cool slightly, then peel off the skins.
Prepare the Egg Mixture:
In a bowl, beat the eggs with a pinch of salt and pepper.
Flatten the Eggplant:
Using a fork, flatten each eggplant on a plate.
Coat with Egg:
Dip the flattened eggplants into the beaten eggs, ensuring they are fully coated.
