If you are ready to make the best
0:02
chocolate fudge you have ever tried,
0:04
this video is for you. This fudge isn't
0:07
just delicious, it's also dairyf free,
0:09
vegan, and it comes together in 10
0:11
minutes. Hey, and welcome to my vegan
0:14
holiday recipe series. I have lots of
0:16
delicious recipes planned, and I know
0:18
you're going to love this chocolate
0:19
fudge. So, let's get right into it.
0:26
We're going to start with what might be
0:27
the hardest part of this recipe, which
0:29
is preparing the pan. I'm using an 8 by8
0:32
pan, and I like to use one that has
0:34
these very square sides so that we don't
0:36
have fudge tapering off around the
0:38
edges. I also cut a piece of parchment
0:40
paper to the width of the pan. When you
0:42
cut this, you want to make sure that
0:44
it's long enough to hang over the edges.
0:46
And to keep the parchment in place, I am
0:48
going to spray some oil in the pan
0:50
first. Then I'm going to add the
0:52
parchment paper and secure it with some
0:55
clips. And then I'm just going to spray
0:58
the parchment paper again.
1:03
All right. So next we're going to get a
1:05
medium pot or saucepan and we're going
1:08
to add in a cup of full fat coconut
1:10
milk, 1 and 1/3 cups of sugar, 2 tbsp of
1:15
vegan butter, and 1/4 teaspoon of salt.
1:18
In case you're worried about this recipe
1:20
tasting like coconut, don't be. We're
1:23
adding plenty of chocolate to cover up
1:26
that coconut flavor, and I have shared
1:28
it with multiple non-vegan friends, and
1:32
I asked them specifically. They all said
1:34
they could not taste any coconut in
1:36
there. All right, so then we're just
1:38
going to turn the heat on to medium low,
1:41
and we're just going to whisk that. Keep
1:43
on whisking until that sugar is fully
1:45
dissolved.
1:51
Before you add in the chocolate, make
1:52
sure you turn off the heat. Now, we're
1:54
going to add 3 and 1/4 cups of vegan
1:58
mini chocolate chips and 1 teaspoon of
2:01
vanilla extract. And you're just going
2:03
to keep whisking that until the
2:05
chocolate is totally melted and
2:06
everything is smooth and shiny.
2:14
And then I'm just going to use my
2:16
heatresistant rubber spatula to pour
2:18
this all into the prepared pan. Smooth
2:21
it out. And then it's just going to go
2:24
in the fridge to chill for about 2 hours
2:26
or until it's set.
2:32
And once it's chilled, the last thing we
2:34
need to do is just cut it into squares.
2:36
So, you can make the squares as big or
2:38
as small as you want, but I'm going to
2:40
cut this into 25 squares. And to keep it
2:43
even, I made a grid out of parchment
2:46
paper. I did get this technique from a
2:50
YouTube video. I can't remember it off
2:52
the top of my head, but I will link it
2:54
in the description below in case you
2:56
want to check it out. So, I'm going to
2:57
start by scoring the fudge on top. And
2:59
then, I'm just going to go in with full
3:01
cuts. To get the cleanest cuts, you want
3:04
to make sure that you rinse the knife
3:05
with hot water in between each slice and
3:08
dry it off.
3:27
And then I'm just going to sprinkle some
3:29
flaky sea salt on top.
3:42
and that's it.
3:48
Fudge is so rich and delicious. It's
3:50
definitely one of my favorite nostalgic
3:53
holiday treats.
3:58
You can keep this fudge at room
4:00
temperature. It will not melt, but I
4:02
recommend before you eat it, at least
4:05
put it in the fridge because you're
4:06
going to get the best texture. At room
4:08
temperature, it won't melt, but it will
4:11
be a little bit on the soft side. All
4:13
right, well, that is all for this video,
4:15
but I do hope I will see you again for
4:18
some of my future holiday videos. In the
4:21
meantime, if you want to check out some
4:23
of my past holiday videos, I will leave
4:24
a playlist for you on the end screen.
4:28
Thank you so much for watching and I'll
4:30
see you in the next one.
