hey guys it's Danny now today I have for
0:08
you a really fun little seasonal snack
0:12
that you can make ahead of time and then
0:14
have ready to grab on the go whenever
0:16
you need a little pickme up or when
0:18
you're just in the mood for something
0:20
sweet without all of the refined sugars
0:22
for this quick bite I am showing you how
0:24
to make my clean and delicious pumpkin
0:27
spice energy balls these are very simple
0:30
to make and what I usually do is make
0:32
them on the weekend when I'm doing the
0:34
bulk of my food preparation and this way
0:36
we have them to go all week long so all
0:39
you want to do is grab a nice
0:41
mediumsized bowl like I've got here and
0:43
to that I'm adding in 1/4 cup of
0:45
unsalted roasted almond butter you could
0:48
really use any nut butter you had on
0:50
hand 1/4 cup of pumpkin puree you could
0:54
do that fresh or from the can again
0:56
whatever you have will work a half a cup
0:59
of almond flour now guys if you're
1:02
already making homemade almond milk you
1:04
really should be making homemade almond
1:06
flour because it's just too easy not to
1:08
and at the end of the day you're going
1:10
to save yourself some money a tablespoon
1:12
of chia seeds now these little guys are
1:15
packed with that hearthealthy omega-3
1:18
fatty acids they have a good dose of
1:20
fiber and I just love the little pop
1:22
crunch they add to this recipe one
1:24
teaspoon of pumpkin pie spice nice warm
1:28
fall flavors and then just the littlest
1:30
babyiest pinch of kosher salt then I'm
1:33
just going to mix this up till I've got
1:35
all those ingredients incorporated and
1:37
mixed really well this looks perfect all
1:40
the ingredients have mixed together so
1:42
what I'm going to do is grab my plate
1:46
and on top of that I'm going to lie a
1:47
piece of parchment paper this is so that
1:51
the balls do not stick to the plate if
1:53
you didn't have any parchment paper you
1:55
could just spray your plate with a
1:56
little bit of non-stick cooking spray
1:58
and that would totally work so I'm going
2:01
to grab about a tablespoon of the
2:03
pumpkin dough and then I'm just going to
2:06
roll that between my palms to make a
2:09
nice little ball about the size of a
2:10
golf ball just like that and then I'm
2:12
just going to lay that onto the
2:13
parchment paper and continue doing that
2:15
until I've used all the dough the goal
2:17
is to get about eight balls so I've got
2:20
all eight balls ready to go and I'm
2:22
going to just pop this into my freezer
2:24
let it set up a bit while I melt some
2:26
dark chocolate because yes my friends
2:28
we're going to need a little bit of
2:30
melted dark chocolate now the easiest
2:32
way to make a homemade double boiler
2:35
without needing to buy any fancy
2:37
equipment is to get yourself a
2:39
mediumsized pot like I've got here add a
2:42
couple inches of water turn your heat up
2:45
to high bring it to a boil turn down the
2:48
heat let the water come to a simmer then
2:51
you want to take a glass bowl and pop it
2:54
right on top of the pot make sure that
2:56
the bowl isn't so small that it falls
2:58
way into the pot and touches the water
3:00
but you also don't want it to be so big
3:02
that it's sitting too high up on the pot
3:04
so something like I've got here is just
3:06
perfect so now that I've got my double
3:08
boiler all set up and ready to go I'm
3:11
going to add in 2 oz of dark chocolate
3:13
that I'm just going to break up into
3:15
some smaller pieces and then I'll stir
3:17
it periodically just to help it along a
3:20
bit until it's all melted down and nice
3:22
and smooth and velvety so I've grabbed
3:25
my pumpkin balls out of the freezer and
3:27
now that my chocolate is nice and melted
3:29
down
3:31
I'm going to grab each one hold it right
3:33
at the end and then just dip it down
3:36
into the chocolate as far as I can
3:38
without touching my fingers in the
3:40
chocolate and just roll the ball around
3:42
to get a nice thick layer of dark
3:45
chocolate
3:46
like that and then I'll just place it
3:49
back down on the parchment paper and
3:51
then this last step guys is totally
3:53
optional but extremely delicious i like
3:55
to take just a little pinch of kosher
3:58
salt and put it right over the top it's
4:00
just beautiful and it tastes amazing
4:04
then I'm just going to keep going until
4:05
I've done all eight balls okay now from
4:08
here I'll just pop them back in the
4:09
freezer to set up and then what I
4:11
usually do once they're frozen through
4:13
is I transfer them into a little baggie
4:15
or some type of airtight container and
4:17
then I leave them stored in the freezer
4:19
and I like it that way because then when
4:20
I grab them on the go by the time I
4:23
start to eat it it softens up just
4:25
enough without getting too melted and it
4:28
is perfect and just for the record
4:30
they're pretty good frozen too and FYI
4:33
guys instead of tossing any leftover
4:35
chocolate you have in your bowl go into
4:37
your pantry and grab out some walnuts or
4:39
some almonds and then toss them around
4:41
in the chocolate lay it out on some
4:43
parchment paper put it in the fridge or
4:45
the freezer and you've got yourself a
4:46
little chocolatecovered homemade nut
4:48
without wasting your chocolate and
4:50
without having to go out to buy candy so
4:53
once the pumpkin balls set up a little
4:55
bit in the freezer they are ready to be
4:57
enjoyed so I'm going to go ahead and do
5:00
a little tester
5:11
you got that chocolate shell that
5:13
crunches as you bite through it and then
5:15
the texture is almost fudgy but it's got
5:17
this warm fall pumpkin flavor and I'm
5:20
sorry but that little kiss of sea salt
5:22
takes it to the next level you guys have
5:24
got to try this one they would be so
5:26
good with a cup of coffee in the
5:28
afternoon or if you have kids go ahead
5:29
and stick one in their lunchbox fun
5:31
little treat if you guys want to print

5:54
i'm Danny Speeds and I will see you next
5:56
time with some more clean and
5:58
deliciousness cheers
6:02
just kidding
6:04
although it was going to go in
6:08
delish because I need to set up a double
6:11
boiler to melt a little bit of chocolate
6:17
wait I should hit the button right or
6:19
it'll go again once the pumpkin balls
6:21
are set up a little bit they are ready
6:23
to be enjoyed so I'm going to give it a
6:26
test
