I think I may have stumbled upon a brand
0:02
new freeze-dried product that you should
0:03
try in your freeze drying business and
0:05
that is to take your famous guacamole
0:07
recipe and convert it into a
0:09
freeze-dried Cube that then you can
0:11
reconstitute later using water and make
0:13
it just as fresh and tasting good as
0:15
before if you want to see how this is
0:17
done and how you can make your own
0:19
recipe using a freeze dryer check out
0:21
this video let's get started now when
0:22
you're thinking about using your freeze
0:24
dryer to start a business and make some
0:25
money you got to think about a couple
0:27
different things number one is how is
0:29
the consumer going to utilize a
0:32
freeze-dried product you could sell a
0:33
freeze-dried strawberry people could
0:35
snack on it and that's fine but what
0:37
other applications could they use for
0:39
those freeze-dried strawberries because
0:42
usually when you're baking with
0:43
strawberries you're going to use it as a
0:45
puree but with freeze drying removing
0:47
the water from a strawberry you now have
0:50
a moisture-free natural ingredient that
0:53
someone can crush up into a powder and
0:55
then naturally flavor it for whatever
0:57
they're going to use it for so
0:58
applications within the freeze drying
1:00
process has a lot of different varieties
1:02
and that's why starting a freeze drying
1:04
business doesn't have to be a huge
1:06
obstacle for you if you think outside
1:08
the box outside of candy and things that
1:10
you're seeing a lot of on social media
1:13
and different people doing so that's the
1:14
actual product side think about what the
1:17
application would be for something that
1:19
you're going to freeze dry and the
1:20
second part of all this is testing
1:22
things out you got to experiment with
1:24
what the freeze-dried process could
1:26
produce for you and that's why having a
1:27
home freeze dryer to start out with to
1:29
experiment with different recipes you
1:31
can really hone in how you want to
1:33
actually present that end product to the
1:36
consumer you actually want it to be some
1:38
type of snack that's freeze-dried as is
1:40
or do you want it to be something where
1:41
they reconstitute it where let's say for
1:44
fresh guacamole someone is on the go
1:47
they're backpacking camping they're
1:48
traveling in the air and they can't
1:50
actually store fresh guacamole no need
1:52
to bring a knife or things like that
1:54
that you need to cut all these different
1:56
ingredients up you can just add water
2:00
natural organic type of guacamole on the
2:03
go so as you can see there's
2:04
opportunities with creating a different
2:06
recipe that is freeze dry you just need
2:08
to figure out what Avenue to go let's
2:09
make some fresh guacamole Now the recipe
2:11
that I'm going to use is my mom's recipe
2:13
which includes cilantro tomato avocados
2:16
Red Onion lime juice and the ranch
2:20
seasoning that you can buy at the store
2:22
we're going to use a mortal imp pestel
2:23
today because I make a lot of guacamole
2:25
for different family meals and so I
2:27
bought this and it was a worthwhile
2:28
investment cuz it crushes everything up
2:30
you can use whatever you want you can
2:32
use a bowl Fork whatever you use to make
2:34
sure all the ingredients are put
2:36
together and after we make the fresh
2:37
guacamole I'm going to share with you
2:38
how I'm going to arrange it on my freeze
2:40
dryer trays to make them perfect serving
2:42
size once they get freeze-dried now I
2:44
don't have an exact measurement of all
2:45
the different ingredients so you're not
2:47
going to really see you know one
2:49
teaspoon of this I usually do guacamole
2:51
to taste if you're really wanting to
2:52
fine-tune your recipe obviously you can
2:54
do the measurements yourself and that
2:56
way when you're going to do a business
2:57
out of it you know exactly what can be
2:59
consisted consistently freeze dry for
3:01
that same taste what my mom told me I'm
3:03
no fancy cook but what she told me if
3:06
you can see right here is to kind of
3:07
bunch up your cilantro and that way when
3:12
you do cut it it cuts all the leaves and
3:16
the little stems perfectly and you don't
3:20
actually have to cut up each individual
3:21
Leaf too much now what we're going to do
3:23
we're going to do some of the onion you
3:25
know with red onion now with it being
3:27
fresh it provides a little bit more of
3:29
that crunch and it also adds just a
3:31
little bit more of kind of a kind of a
3:33
kick to it and adds a little bit more
3:35
flavor so that's what that's why we're
3:36
going to do uh red onions now what I
3:39
usually do with my guacamole kind of
3:41
cadence is I don't ever put like the
3:44
actual tomato in here yet because I want
3:47
to make it and grind it up uh with some
3:49
of the harder ingredients and then I'll
3:51
put the Tomato in the last just because
3:53
that way it's uh not completely smashed
3:55
into into the recipe I like cutting up
3:57
these avocados into little squares
4:00
within even within the skin you don't
4:03
have to do that uh you could just put
4:05
the whole avocado in there obviously
4:08
scooping it out from the skin call me
4:09
OCD this is what I've always done and it
4:12
takes a little bit longer but it just
4:14
makes it smaller pieces we're going to
4:16
see for the first time I've never done
4:18
freeze-dried guacamole but we're going
4:20
to do that today and we're going to see
4:22
how we can kind of reconstitute it so
4:25
that it tastes the same I'm sure it's
4:27
going to taste the same because I mean
4:29
all the flavor is still in here and the
4:31
great thing about freeze drying is that
4:34
it keeps the highest level of
4:36
nutritional value in whatever you're
4:38
freeze drying upwards of 90% typically
4:41
and the seasoning that I use for
4:43
guacamole is this ranch seasoning you
4:46
can use you know natural things like
4:48
salts and things like that but I use the
4:51
ranch seasoning just because I don't
4:53
know there's something different about
4:55
how it tastes all right there's all the
4:57
tomatoes putting that in there I usually
5:00
one roma tomato per three avocados I
5:03
don't do any more than that just because
5:05
unless people really love a ton of
5:07
tomatoes I don't do that so we'll just
5:10
use a spoon to mix it all up look how
5:15
is now with the lime juice I just kind
5:18
of juuce a couple squirts I don't do too
5:20
much that's probably more of like a half
5:22
a teaspoon or so after I get done with
5:24
that I'll just put a little bit more
5:25
ranch seasoning in that should be all
5:28
the ingredients so let's give a good
5:30
taste oh yeah that's good all right so
5:32
how are we going to freeze dry this well
5:34
for one what you see in front of me this
5:36
is one of the silicone molds that
5:39
Harvest has and you can buy off their
5:41
site on harvestright.com now I've got a
5:44
couple of these that they sent me when I
5:46
bought one of my freeze dryers several
5:48
years ago so you can buy them on their
5:49
website and what I like about these
5:51
different molds is that it puts it in
5:53
these little bit siiz cubes here and
5:55
think about it in the business side of
5:56
things so if you just need somebody for
5:59
backpacking and they just want a couple
6:01
of Cubes just to get a couple of good
6:04
savoriness to whatever they're cooking
6:05
on their camping trip they don't need
6:08
huge blocks of myar bags of guacamole
6:10
right they just need a couple cubes so
6:12
it gives you an opportunity to look at
6:14
small serving sizes but also look at the
6:17
way you're going to present the
6:19
guacamole cubes as well because you want
6:21
it to be presentable when someone
6:22
actually opens up the bag or uses it and
6:25
I kind of think of it being similar to a
6:27
cube of chicken bullion you know where
6:29
you drop that little cube in and it
6:30
dissolves in the hot water in the
6:32
microwave or in boiling water that's
6:35
kind of what I'm envisioning these
6:36
little cubes of guacamole to be that are
6:38
freeze-dried is something that's very
6:40
manageable to put in a packet and then
6:42
reconstitute so in order to kind of get
6:44
those serving sizes I'm going to add all
6:46
this guacamole to this bowl and then
6:48
we'll weigh it that way we know how much
6:50
guacamole we're going to put into this
6:52
tray all right now we've got all the
6:53
guacamole in there let's put it back
6:55
onto the scale and 470 G I'm writing
6:57
that on a piece of paper just so we know
7:00
and then once we freeze Dr this we'll
7:01
know what type of moisture was removed
7:04
from it because I'm assuming it's going
7:06
to lose the weight of that lime juice
7:07
and the avocado juice and tomato juice
7:09
things like that all right so to make
7:11
things easy I'm just going to put all
7:13
this guacamole on the cubes I don't
7:15
really care where it's going like in the
7:17
middle or whatever because the freeze
7:19
dryers of today's world like they're
7:22
smart enough to where they just sense
7:25
all the moisture that's in whatever
7:28
you're putting in there so so it doesn't
7:29
really matter whether it's on the edges
7:31
or or whatever but we're obviously going
7:33
to want to check for dryness once we get
7:35
done but this is kind of just what I'm
7:37
doing I've I've actually done for my
7:40
freeze drying business I've done some
7:41
testing for different people um where I
7:45
just say hey send me your yogurt recipe
7:48
or people talk to me about different
7:49
things that they want to test and that's
7:51
part of having a freeze dryer and having
7:52
a freeze drying business there's a lot
7:54
of ways for you to grow a business and
7:56
make money I am kind of pressing firmly
7:58
on these tubes because I want to make
8:00
sure that that there's not like eror in
8:05
the middle I want it firmly pressed
8:06
because I really want to try to get a
8:09
firm cube out of each individual Square
8:14
looks like we've got uh 1 2 3 4 five by
8:18
six so we've got 30 different cubes
8:21
perfect well there you have it fresh
8:22
guacamole made with fresh ingredients
8:25
now it's time to freeze dry it so the
8:26
freeze dryer process actually can
8:29
prefreeze your food and then freeze dry
8:32
it taking out all the moisture going
8:34
through that process of sublimation but
8:36
what you can do is speed up the whole
8:38
freeze drying cycle Time by pre-freezing
8:41
your fruit so if you're new to freeze
8:43
drying you can do that just find a stand
8:45
up freezer put it in your home freezer
8:47
and you can kind of save 5 to 6 hours of
8:49
what the freeze dryer would freeze it
8:51
for and that way you're just going
8:52
straight to the freeze drying cycle
8:54
process I'm going to put these tray Lids
8:57
uh for my Harvest Right on here this is
8:59
made by Freez dryings supplies.com and
9:02
what I love about these tray Lids is
9:04
they've got these raised edges as you
9:06
can see right here these allow you to
9:08
stack more and more trays on top of here
9:11
even with the tray lids and that's kind
9:13
of different than having the actual tray
9:15
stackers on the edges this prevents a
9:17
little bit more of that susceptibility
9:19
to freezer burn other types of things
9:21
maybe getting exposed to your fresh
9:23
product here so if you want to buy these
9:25
you can go to the video description and
9:27
go to Freez dryings supplies.com I've
9:29
got link below in the video description
9:30
you can use my affiliate link once this
9:32
is prefrozen for 5 to 6 hours I'm going
9:34
to then activate my freeze dryer
9:36
settings and what we're going to try to
9:38
do that at for testing purposes is we're
9:40
going to do it at the factory temp of
9:43
125° I'm going to set the pre-freeze
9:46
temp at -5 initial freeze down to uh
9:50
just maybe 2 or 3 hours that's just
9:52
because I've already prefrozen it but
9:54
that just adds a little bit more of a
9:56
safeguard uh to it all right don't go
9:58
anywhere because when we come back back
9:59
we're going to see what fresh guacamole
10:01
looks like freeze-dried we're going to
10:02
do some taste testing as well as see
10:04
what it looks like texture-wise and also
10:06
going to do some reconstitution with
10:08
some water to see if we can get it back
10:10
to this original state with the same
10:12
great taste that we have today while we
10:14
wait for the freeze dryer to do its
10:15
thing you can support this Channel and
10:17
my efforts with the freeze drying
10:19
industry in two ways number one is like
10:22
or subscribe to this channel that'll
10:24
really help more and more of my videos
10:26
get to more people to help them in their
10:28
freeze drying journey and number two is
10:29
you can do something completely free
10:31
which is join my email list of freeze
10:33
drying entrepreneurs and people
10:35
interested in the freeze drying space
10:37
and you can be really connected with
10:38
what's happening in the freeze drying
10:40
industry so if you want to be more
10:42
connected to this channel go to the
10:44
video description down below and click
10:45
on Freez dried bus.com you'll see a
10:47
popup that pops up to enter your email
10:49
and then I'll send you a welcome email
10:51
with also my Roi spreadsheet to
10:53
calculate what type of Roi and profit
10:55
you can generate from a freeze drying
10:57
business so thanks a lot let's get back
10:58
to see what the freeze dryer did to the
11:00
guacamole all right the freeze dried
11:02
cycle is done I'm really excited to show
11:04
you what the finished freeze dried
11:05
guacamole Cube looks like let's take a
11:08
look at the finished product here all
11:11
right take a look at this so as I get
11:13
the molds out and pop out these
11:16
different cubes this is a Harvest Right
11:18
logo because that's what they have the
11:20
molds for but as you can see it stayed
11:23
pretty intact now let's put this on the
11:24
counter and just give it you some
11:26
perspective take a look at that you can
11:28
see the salon that I put in there you
11:30
can even see some of the Tomato that I
11:33
put in there it all freeze dried
11:35
together and it's actually very light I
11:37
don't want to crush this cuz we're going
11:38
to use it for simple purposes but it's
11:41
really not that heavy look at that even
11:43
the red onion is in there okay so let's
11:46
take all of this out of the tray and
11:49
let's weigh it total because I've
11:54
my Nifty little piece of paper that we
11:57
did initially and it was for 470 G of
12:02
gross product the gross guacamole weight
12:05
so let's go ahead and weigh all the
12:07
freeze-dried cubes and then see how it
12:09
comes out and how much water it losts
12:11
okay now here's the fun part about
12:12
freeze drying and if you're wanting to
12:14
start a freeze drying business this is
12:16
kind of the fun experimentation and the
12:18
research side of testing out different
12:21
products what we're testing out is can
12:24
we freeze dry guacamole fresh guacamole
12:27
that we mix up with the different
12:28
ingredients I would say that yes check
12:31
we have made freeze-dried guacamole
12:33
second part of that is we want to see
12:36
how much weight it lost because we want
12:38
to see one how can we package it up to
12:41
give a certain amount of serving size we
12:43
also want to be able to calculate how
12:45
much actual gross product do we need to
12:47
make if we were going to make this at
12:48
scale because if we're running a
12:50
business or we're trying to see if we
12:52
can Market this better then we would
12:54
actually want to see how much product we
12:56
can produce in one batch of of gu
12:59
guacamole third part is going to be what
13:03
reconstitution for our freeze-dried
13:05
guacamole because we took the water out
13:07
through the freeze dryer process so if I
13:09
put a cube into this bowl and then I put
13:12
maybe a teaspoon of water is that how
13:15
much water it lost in here or do we need
13:18
to put a little bit more water in there
13:20
so let's first actually weigh the bowl
13:23
and that way we can tear it off and
13:24
we're doing this in grams like we did
13:26
initially and start loading them into to
13:29
the Bowl I've already put six in here
13:32
and it's only reached 18 G so a lot of
13:36
weight has been removed through the
13:38
freeze drying process for all of these
13:41
guacamole cubes and you see how you know
13:44
there's a little bit of shavings that
13:45
are is over the top because the cube
13:47
went in here if you were going to sell
13:48
this what I would do is obviously I
13:52
overhanging look and feel so I would
13:54
kind of clean this up and make sure the
13:56
cubes look very presentable if you
13:58
watched a lot of my videos I'm kind of a
14:00
perfectionist in this way in that like I
14:02
just really look at how the how the
14:05
product looks versus uh immediately just
14:08
like hey did it work and and put it in
14:10
the package so I want it to be high
14:12
quality both on looks and taste 90 G
14:16
total so 470 G is what we started with
14:20
and then now we reduce that all the way
14:22
down to 90 G okay so now what we're
14:25
going to do is we're going to focus on
14:26
the reconstitution part I don't actually
14:29
a whole lot of reconstitution so we're
14:31
going to kind of experiment in just my
14:33
own way but you can obviously go through
14:35
a lot more in-depth research on figuring
14:38
out exactly uh you know how much water
14:41
weight you lost in the product and then
14:43
figuring out backwards math you know how
14:45
much you should put back into a given
14:48
product so what I'm going to do is I
14:50
know we had 470 G of guacamole before we
14:54
freeze dried it and after that we just
14:57
waited and now we have 90 G Net which
15:00
means that we lost 380 G of water weight
15:04
from the guacamole so in my Nifty little
15:07
phone here I put 380 g into an ounce
15:11
conversion and it came out with that
15:14
13.4 Oz all right now I'm going to cheat
15:17
a little bit I'm going to ask Siri how
15:19
many tablespoons are in 1 o because now
15:22
we can actually do the calculation of
15:24
seeing how much the conversion is of
15:26
tablespoons to ounces so let's ask her
15:28
how many many tablespoons is in 1 o the
15:31
answer is 2 tablespoon okay if you
15:33
didn't hear that she said 2 tablespoons
15:35
so we have 10 cubes and we did 30 cubes
15:39
total so we can make basically an ounce
15:41
worth of guacamole reconstituted and so
15:45
now we're going to put 2 tablespoon of
15:52
bowl and this should be the amount that
15:55
we that we uh remove and all we're going
15:58
to do now with the cubes now is we're
16:01
just going to kind of mix this up it's
16:02
getting a lot more into more of kind of
16:05
that that chunkiness here hopefully you
16:08
can see that so I'm going to go one more
16:12
tablespoon so 3 tablespoons to an ounce
16:16
and yeah this is looking good this
16:19
actually looks just like what we
16:21
originally had with our guacamole okay
16:23
shame on me for not having actual
16:25
tortilla chips but I've got some Ruffles
16:27
in my pantry and I'm going to test this
16:30
out and see what this reconstituted
16:37
like wow I'm not lying that tasted just
16:44
guacamole I'm not I'm and I'm I'm not
16:46
doing that just for this video like this
16:50
delicious let me give you an idea of
16:52
what I just tasted texture was the same
16:55
as the fresh guacamole tasted creamy
16:57
there wasn't any kind of chunkiness to
16:59
it um I can taste the Red Onion I can
17:01
taste the avocados great I have a little
17:04
bit more of that saltiness that's in
17:06
there that's what I tast it as well you
17:07
know the only thing that it was
17:09
different was you know there wasn't a a
17:11
ton of crunch from the the fresh red
17:13
onion which is okay this tasted awesome
17:16
all right we're done with the taste test
17:18
and everything I don't know about you
17:19
but I really was thrilled with the way
17:22
this all turned out so let's talk about
17:23
the business end of freeze drying
17:26
guacamole so number one is I think if
17:29
default having this product freeze-dried
17:31
as is and having it as a snack like a
17:33
freeze-dried strawberry or freeze-dried
17:35
ice cream scoop that's not going to be
17:37
the selling point I would go with the
17:39
reconstitution idea and just like with
17:41
any business once you have a product you
17:43
need to figure out who your target
17:44
audience is and what type of marketing
17:47
language and words you can actually use
17:50
to tell people why they would want to
17:53
have a freeze-dried guacamole Cube and
17:56
reconstitute it versus having fresh and
17:59
again if you want to start a freeze
18:00
drying business this is the next phase
18:03
of this industry a lot of people freeze
18:05
dry candy a lot of people are kind of
18:08
used to having and seeing freeze-dried
18:10
Skittles freeze-dried everything right
18:12
so now we have to raise it to the next
18:14
level freeze drying is not a fat freeze
18:17
drying is not going away but what is
18:19
going to go away is the newness of a
18:21
product once everyone's experienced
18:24
having a freeze dried Skittle it's not
18:26
as new anymore and so now now you have
18:29
to kind of change things up so how can
18:31
you make a Freez dried product and
18:33
Market it as something that you can call
18:36
it your own So speaking to the person
18:38
who is looking at the freeze drying
18:40
industry space and seeing a lot of
18:42
different chatter online about this
18:44
Market being very saturated you're only
18:46
hearing that from people who have
18:49
basically kind of had a great success
18:51
with the newness of freeze-dried candy
18:54
and really they just went in there with
18:56
no idea really what their business is
18:59
this is really going to Define you this
19:02
type of recipe and research and
19:04
experimentation with freeze drying
19:06
processes is really going to take you to
19:08
another level and really going to
19:10
probably give you a lot more confidence
19:11
going into this so that you know what
19:13
you're kind of going to be doing with
19:15
the freeze dryer and if you want to
19:16
learn more about freeze drying and how
19:18
to prepare different things for your
19:19
freeze drying business check out the
