this is the beginner's guide how to
0:01
freeze dry tropical fruit we're going to
0:03
cover everything from the tools that you
0:04
need to cut all the different fruit that
0:06
we're going to cover in this video as
0:08
well as freeze drying tools and
0:10
equipment that'll make your life a lot
0:12
easier to prepare fruit and sell it in
0:15
your freeze drying business before we
0:16
prepare the fruits that are in front of
0:18
me I just want to encourage you to
0:19
subscribe to this channel if you're
0:21
interested in freeze drying this is a
0:22
unique Channel where we talk about
0:24
things not only revolving around freeze
0:26
drying but freeze drying as a business
0:28
so if you're interested in using your
0:29
fre dryer to make some side income or
0:32
grow it to a full-time business these
0:34
are the types of videos that I'm going
0:35
to be putting out on this channel so
0:37
make sure you subscribe hit the Bell
0:39
notification as well because that'll
0:41
actually trigger different notifications
0:43
for when a new video comes out just like
0:45
this one one thing I love about the
0:46
freeze drying industry is that there's
0:48
so many different things to try now
0:49
there's Facebook groups there's my
0:51
videos there's other people's videos on
0:53
YouTube that you can watch but I wanted
0:54
to cover five different tropical fruits
0:57
that one I've been trying to do in my
0:59
Freez DED business but I also wanted to
1:01
see how it freeze-dried because I
1:02
haven't done these in the past now I did
1:05
a video recently on other types of
1:07
fruits that you can check out in the
1:08
video card above or at the end of this
1:10
video I've always got also links to
1:12
previous videos in the video description
1:14
that you can check out I've also got
1:15
some new freeze drying equipment from
1:18
freeze drying supplies.com if you
1:20
haven't checked them out I'm going to be
1:21
a new affiliate for them and that just
1:24
means that I'm going to be promoting
1:25
their products a little bit more because
1:27
I see a lot of value in what they're
1:28
putting together and and they're
1:30
americanmade now maybe you're familiar
1:32
with the fruits that are in front of me
1:33
but if you're not this is what we're
1:35
going to be doing today we're going to
1:36
be doing five different types of fruits
1:38
because I've got a large Harvest Right
1:39
freeze dryer and so we're going to put
1:41
each fruit on one tray this fruit right
1:44
here papaya now I don't typically eat
1:47
papayas but I know it's very valuable in
1:50
antioxidants we're also going to cover
1:52
how to freeze dry dragon fruit it's
1:55
actually really expensive in an area
1:56
like where I am which is in Idaho so
1:58
these cost about3 $ each so we'll freeze
2:01
dry these because it is a tropical fruit
2:03
I've also got kiwis my sons love kiwis
2:06
so we're going to peel these and prepare
2:08
them on the freeze dryer trays we're
2:11
also got mangoes I've got a special tool
2:13
that I bought off of Amazon to peel
2:16
these and get the fruit out of here and
2:18
then we've of course got pineapple now
2:20
why is tropical fruit important for you
2:23
in your freeze drying business well it
2:25
adds a lot of variety to things that
2:28
other people maybe aren't doing free
2:30
drying fruit takes a long time to freeze
2:32
dry it typically takes 36 to 48 hours to
2:34
do a full cycle of 10 to 16 lbs in your
2:38
large Harvest rate freeze dryer if
2:40
you've got a medium same type of thing
2:42
so it takes a lot longer than candy but
2:44
the benefit is that fruit retains 94% of
2:48
its nutritional value after freeze
2:50
drying that's because of the sublimation
2:53
process that the freeze dryer is doing
2:54
for you so it's taking all the water out
2:56
of the fruit but it's through the vacuum
3:00
process it's kind of extracting water as
3:03
a vapor and then it's kind of drying it
3:05
and then ever so slightly kind of going
3:07
back and forth so you're left with kind
3:09
of basically the same looking feel of
3:11
the fruit but the value is still there
3:13
because it's not draining it all of its
3:15
nutrients like a dehydrator would before
3:17
we start cutting the fruit we will be
3:19
talking about the freeze dryer settings
3:21
that I'm going to be putting into my
3:23
Harvest Right freeze dryer towards the
3:25
end of this video so make sure you stay
3:26
tuned also right now hit that like
3:28
button if you love freeze drying and you
3:30
love seeing freeze drying different
3:32
types of fruits thanks a lot let's get
3:33
to The Cutting starting out with
3:35
pineapple this is what we use for cing
3:37
the pineapple it is a pineapple core
3:40
it's 12 15 bucks it's on Amazon you can
3:42
find a link in the video description
3:44
below now moving on to Mangos I've got a
3:46
particular tool for taking the pit out
3:49
of a mango it's not a normal pit that
3:51
you're used to seeing in like cherries
3:54
and peaches things like that no the
3:56
mango pit is flat so you actually have
3:58
to peel the fresh fruit around the pit
4:02
before you do that and one of the tools
4:04
that you can use is this mango de Pitter
4:07
slicer type thing this is not very
4:09
expensive at all either it's on Amazon
4:11
go to the video description I've got a
4:12
link there and you're simply going to
4:14
press down and it goes right down the
4:16
middle of the mango and we'll slice
4:19
through that and I'll share with you
4:20
once we prepare the mango how that
4:22
happens and the last three remaining
4:24
fruit for kiwi papaya and dragon fruit
4:26
we're simply just going to use a knife I
4:28
use these all the time around our k
4:29
kitchen it's just the qart type of knife
4:31
set has different sizes if you don't
4:33
have a knife set or if you want to go
4:35
buy a really nice one from Cutco
4:37
something like that I haven't had any
4:39
problems with these and my wife and I
4:40
have been married for 10 years got these
4:42
for our wedding so it's lasted a long
4:44
time you can sharpen these you can do
4:46
whatever but get a good set of knives
4:48
when you're preparing fruit I've also
4:50
got this Cutco smaller type of knife I
4:53
love these for strawberri smaller types
4:55
of fruits I'm going to use them on the
4:57
kiwis so if you don't have a sharp knife
4:59
and you don't have a cut coat knife this
5:00
is really nice to have and I've got some
5:02
links in the video description below to
5:04
Amazon and other links so that you can
5:06
buy these knives directly and if you
5:08
have Amazon Prime you're going to get
5:10
these in about a day or two so very
5:12
quickly to be able to get things that
5:14
you need for your freeze drying business
5:15
hey if you're looking for a freeze dryer
5:17
there's a couple of brands that I
5:18
recommend I personally own Harvest right
5:21
I've owned several different large
5:23
freeze dryers and I still own them today
5:25
highly recommended and if you're going
5:27
to start a freeze drying business I'd
5:29
recomend the XL freeze dryer as well as
5:31
looking at the HRC 100 which can do up
5:34
to 100 lb of product that one I would
5:36
prefer if you have four or five XLS in
5:39
your business and you're really looking
5:40
at trying to decide what your next
5:42
purchase is going to be that HRC 100
5:44
might be a benefit and I'll include a
5:46
link in the video description to harvest
5:47
right commercial.com I do own stay fresh
5:51
I own the original medium in between
5:54
kind of the large Harvest Right freeze
5:56
dryer for stay fresh it's been a beast
5:58
of a machine I love that machine and uh
6:01
I use it for my freeze drying business
6:02
too i' recommend stay fresh I've got a
6:04
link to purchase that in the video
6:06
description as well now I have talked to
6:08
the owners of blue Alpine seems like a
6:10
great freeze dryer they're built locally
6:12
here in Idaho uh out in Idaho falls and
6:16
they are trying to be the first kind of
6:18
us made freeze dryer now they do buy
6:21
some components I believe out of the
6:23
country but they assemble it and make it
6:25
all in Idaho which is pretty awesome so
6:28
if you want to check those three freeze
6:29
dryers out hit the video description and
6:31
you'll see all the links to those now
6:33
what we're going to do with the
6:33
pineapple again is we're going to take
6:35
that pineapple core right little area
6:37
that has the jagged edges we're going to
6:39
put that right on top where we see the
6:40
core push down and then we're simply
6:45
turn this core this is how easy it is it
6:48
doesn't take a whole lot of strength to
6:49
do once you start hearing it kind of
6:52
like cutting in in a non soft rougher
6:55
way that's when you know it's down at
6:59
the very bottom and it pulls out the
7:01
entire pineapple we're simply going to
7:03
press down on our slicer and get all of
7:06
our nice little pieces now here's my
7:09
Harvest State large freeze dryer tray
7:11
and what I've got is some parchment
7:13
paper that I got from freeze drying
7:14
supplies.com now you can get parchment
7:17
paper wherever I do like supporting
7:19
Brian over there he's got a bunch of
7:22
different freeze drying supplies and
7:23
I've also got some Freez drying Lids
7:25
right behind me that I'm going to share
7:27
with you that we're going to stack the
7:29
tray on top of and then we're going to
7:30
prefreeze before we put it in the freeze
7:32
dryer all this fruit so the parchment
7:34
paper helps with just one cleanliness
7:38
you don't have as much residue on the
7:40
actual tray which makes cleaning up
7:42
easier but also it does come off of the
7:45
parchment paper easily once it's
7:48
actually done with the freeze drying
7:50
process I'm going to arrange the
7:51
pineapple where there's no stacking of
7:54
slices the reason I'm going to do that
7:56
is because it's just going to be easier
7:59
for the freeze dryer sensors everything
8:02
is going to be able to sense that
8:04
there's only a single layer and there's
8:06
not too much product um I don't consider
8:08
myself an expert in freeze drying but I
8:10
have done a lot of experimenting that I
8:12
kind of have figured out what I'm
8:14
failing at and what has worked best
8:16
we're going to go over to my little tray
8:18
area for my home and find these tray
8:21
stackers as you can see this fits
8:23
exactly on the large tray it snaps on
8:27
each end and what fortunate about this
8:30
is it already has the tray stackers for
8:33
another tray now this right here is not
8:35
something that you would put in your
8:36
freeze dryer this is purely just to not
8:39
have any freezer burn or not have
8:42
anything kind of exposing the fruit when
8:45
you're actually pre-freezing your fruit
8:47
so we're going to grab another Harvest
8:49
Right large freeze dryer tray snaps
8:52
there and then we're going to put
8:53
another parchment paper right on top of
8:54
here and start doing another type of
8:56
fruit now he makes all different sizes
8:59
of these tray lids and parchment paper
9:02
so no matter what size you have even if
9:04
you have a stay fresh machine blue
9:06
Alpine the cube he's building all these
9:09
different things for those different
9:10
types of freeze dryers so take a look
9:12
all right so let's get started with the
9:13
mango so again this detaches this is the
9:16
base and then you have the thing that's
9:18
actually going to depit the the mango so
9:21
what we're going to do is we're going to
9:22
put the mango like this right inside the
9:24
center and we simply slide down the
9:27
riper the mango is is obviously the the
9:31
more smooth is going to go down but as
9:33
you can see here's the flat area of
9:36
where the pit is but we'll toss that
9:37
aside for now and what you're left with
9:40
with this mango two fresh pieces of
9:42
fruit which is awesome okay and just cut
9:45
these very thin again the reason you're
9:48
cutting them thin is the length of time
9:52
that that freeze dryer cuz it has
9:54
sensors right it's sensing what type of
9:56
moisture content is in this fruit it
9:59
could take a long time if you don't uh
10:02
if you don't cut these thin but again
10:05
it see how quickly that was what I'm
10:07
doing is I'm just I'm taking this just
10:10
like I would like an orange or an apple
10:13
and just taking the skin off because I
10:15
want to do two different types of
10:17
methods with the mango because I really
10:19
just don't do this very much I'm going
10:22
again this half I'm cutting in thin
10:27
slices like this the next next half I'm
10:30
going to cut in kind of bigger chunks
10:32
like maybe like cubes see that right
10:35
there so we've got that all on this tray
10:39
right here so that is the mango hey if
10:41
you're loving the video right now about
10:43
how to freeze dry tropical fruit would
10:44
you give this video a thumbs up right
10:46
now it's just going to really help the
10:48
algorithm on YouTube YouTube loves to
10:50
see people engaging through comments and
10:52
likes things like that so if you can do
10:54
that for me that'd be great this video
10:56
will reach more and more people who want
10:58
to freeze dry tropical fruits just like
11:00
this all right let's get started with
11:01
dragon fruit I've never done this before
11:02
but I've watched a couple videos on how
11:04
to actually peel the dragon fruit apart
11:08
that type of thing also I interviewed a
11:10
freeze dryer entrepreneur down in Panama
11:13
his name is Eric and he runs the YouTube
11:15
channel called two guys in a cooler if
11:17
you want to check out that interview
11:19
with him he is awesome and he's got a
11:21
lot of great videos as well that video
11:23
can be found in the thumbnail as well as
11:25
up above here in the card if you want to
11:27
check out that video but he recommend
11:29
doing dragon fruit and down there in
11:31
Panama they've got all different types
11:33
which I didn't even know that and what I
11:34
read online is that you're simply going
11:36
to cut off the ends now if you've done
11:39
this before I'm sorry if I'm doing it
11:41
incorrectly but I know that they said to
11:44
cut off the ends of the dragon fruit now
11:46
you're just basically going to peel back
11:49
this skin of the dragon fruit and expose
11:52
the fruit part so it kind of looks like
11:54
a kiwi but it's white what I'm going to
11:56
do is I'm going to cut it just into thin
11:59
slices now for the second one I might
12:02
just cut them up into cubes so isn't
12:04
this great this is great what I love
12:06
about freeze drying is I'm literally
12:08
trying all different types of stuff and
12:10
the reason you freeze dry fruit is one
12:14
for long-term storage depending on what
12:16
type of packaging you're going to use
12:17
you can store freeze-dried anything for
12:21
a long period of time most websites say
12:24
25 years I don't know of anybody that
12:26
freeze dried something in 1999 as of
12:29
this video and is eating it today so I
12:31
don't really know how accurate that 25
12:34
years is but we do know that there is
12:37
packaging that you know the military
12:39
uses that has MREs and things that can
12:42
store for a very long time in fact
12:44
people are still opening those types of
12:46
things from the World War II and things
12:48
like that good I'm actually going to
12:50
take a taste of this dragon
12:55
kiwi a little bit of a crunch too that's
12:58
delicious hey if you're in interested in
12:59
freeze drying or you're interested in
13:01
any of the equipment that I used in
13:02
today's video so far you can check out
13:04
Freez drying supplies.com I've got it up
13:07
here in the video as well as in the
13:09
video description now I'm an affiliate
13:11
of them so you will be kicking back a
13:13
little bit back to me for this video
13:14
that type of Kickback from fre drying
13:17
supplies really will help me put out
13:18
more and more videos and time into this
13:20
channel so that I can expose you to more
13:22
and more about freeze drying free drying
13:24
entrepreneurship and the whole industry
13:26
as a whole I've got a lot of great
13:29
so if you're interested go to Freez
13:31
drying supplies.com and you'll check out
13:33
all different types of supplies and
13:35
accessories that you can do to improve
13:37
your freeze drying and freeze drying
13:38
business now let's get back to the next
13:39
couple fruits all right let's get
13:41
started with the papaya now I've never
13:43
done this before so this is going to be
13:44
my first time as well so you're going to
13:45
see my my failures in here or my
13:48
successes but what I did see online is
13:50
that you're going to basically peel the
13:52
skin off of the papaya leaving and
13:54
exposing the fruit which should be kind
13:56
of a pinkish color and then what we're
13:58
going to do is we're going to cut it
13:59
right in half and that will expose the
14:01
seeds inside here there's seeds in
14:03
papaya again this is my first time so
14:05
I'm just going to kind of see how thick
14:07
I'm doing it and I'm going to go right
14:09
along the edge of here and just keep
14:13
cutting the skin off of the papaya I
14:15
don't know if any of you watch ASMR
14:18
videos but this kind of stuff would give
14:20
me the tingles a little
14:23
bit just seeing someone slice all this
14:26
it's just kind of very soothing to to
14:32
see I know I'm going going kind of slow
14:34
but this is just kind of fun to see
14:36
these slices all right so now we've got
14:39
the skin all off we're going to toss the
14:41
skin aside and we're going to do exactly
14:43
what most fruit requires which we're
14:45
going to cut the ends off I'm going to
14:47
cut right down the half this is what I
14:49
watched and if you're wanting to rewatch
14:52
this see how there's seeds inside here
14:54
this is pretty cool we're going to scoop
14:57
out all these seeds okay I'm going to be
15:00
careful not to scoop out too much of the
15:03
fruit I'm sure there's some nutritional
15:05
value in the seeds too so it wouldn't
15:07
hurt to um actually freeze dry maybe
15:11
papaya seeds so I'm going to cut it into
15:13
these kind of slices here I'm going to
15:16
try to get the same amount of length I'm
15:19
actually not really a cook but I'm
15:23
at the thickness and the accuracy that
15:26
I'm doing right now as you can see I'm
15:29
not I'm not really trying to be super
15:31
specific here I'm just going to cut them
15:33
up into smaller pieces and we've got our
15:35
thicker kind of longer pieces as well
15:37
again if you're interested in freeze
15:39
drying if you like freeze drying as a
15:41
business and you're interested in this
15:42
Channel and following me more make sure
15:44
you check out the next couple videos
15:46
after we get done with the kiwis and
15:48
I'll show you the blueprint to freeze
15:50
drying other types of fruits like
15:52
blueberries strawberries things like
15:54
that and also there's a ton of other
15:56
videos that you can find did you know
15:59
over 50,000 tons of kiwis produced every
16:03
year in the United States that's a lot
16:05
we also import them um in the United
16:07
States from other countries but kiwis
16:09
are great this is the last fruit that
16:11
we're going to do I just like cutting
16:13
off the ends and then I also I kind of
16:16
just carefully cut the outside of the
16:18
skin you don't have to do this you can
16:21
use a spoon I'm going to cut these in
16:23
like kind of the thinner slices so we
16:26
have kind of a full kiwi so what we're
16:28
going to do do here instead is I'm going
16:30
to cut it kind of at the top and now
16:32
we're going to scoop out the
16:36
Kiwi from the skin the problem with this
16:40
though is I feel like you lose some of
16:42
the fruit in here see um so that that's
16:45
just kind of the the pros and cons of
16:47
this plus it's super juicy see all the
16:49
juice coming out of this anyway this is
16:51
just not going to turn out good I don't
16:53
like this method too much hit that like
16:55
button I'd really love the support that
16:57
way I kind of gauge whether this is
16:59
something everyone is interested in if
17:01
you've got a faster method of cutting
17:03
kiwi I'd love to hear about it that's
17:05
what the comments in YouTube is all
17:07
about is I read every single one of
17:10
those I try to respond as quickly as I
17:12
can because I want to engage with all of
17:15
you all of us are in this in freeze
17:17
drying no matter where you're just
17:18
starting out experimenting with candy
17:21
fruit ice cream other types of products
17:25
all of us are in this together and this
17:27
is just the beginning
17:29
of the freeze-dried business industry
17:32
because it used to be all pharmaceutical
17:34
it all used to be for the big boys and
17:36
companies now we can all make our own
17:39
living doing this and don't worry about
17:41
saturation if you're watching this long
17:43
into the kiwis this is my this is my my
17:46
two cents about everyone talking about
17:48
all the market saturated and Candy
17:50
everything like that well if you look up
17:52
the definition of saturation that means
17:55
that you can basically no longer like
17:59
fill and there's no candy to be made
18:01
ever again like no everyone's eaten or
18:04
eaten all all the candy possible which
18:06
isn't true there's so many different
18:08
other avenues so don't worry about that
18:10
keep doing what you're doing and there
18:12
is so much runway for a freeze drrive
18:16
business coming up in the coming years
18:20
and I'm proof of that I'm just I'm still
18:22
doing it after 4 years I've still got
18:24
this channel it's all going to be dedic
18:26
dedicated to highlighting what's
18:28
possible now we've got all the trays
18:31
we're going to use this final tray
18:34
lid snap it shut the freeze dryer
18:37
settings for this fruit I'm going to do
18:38
is the default settings for pretty much
18:41
all freeze dryer Brands which normally
18:43
come at a default at 120 or
18:46
125Β° that's what I'm going to run these
18:48
at but I'm going to make sure that the
18:49
final dry is at least 6 to 8 hours long
18:53
you can do it as long as you want to but
18:55
that's what I'm going to start these out
18:56
at go to the next couple videos and the
18:57
thumbnails coming up next next and watch
18:59
more videos about freeze drying
19:01
especially my blueprint to freeze drying
19:04
other types of fruits as well check that
19:06
video out and I'll see you there
