WATERFALL COOKING: My experience began with a roughly 30-minute hike through the jungle past papaya and mango trees. We arrived at a waterfall, where our cook, Joakim, prepared a corn split pea soup containing coconut milk, garlic, chives, celery, pumpkin, green bananas, roasted split peas, scotch bonnet peppers, and sea moss jelly. It was so rich and packed with flavor, and was so hearty that you wouldn’t even miss the meat! Best of all, it’s quick and easy and only takes 30 minutes to make!
