This is one of those salads that
0:02
properly fills you up with roasted
0:04
carrots and beetroot, lentils, water
0:06
grass, and some goats cheese. Start by
0:10
cutting your carrots and your beetroots
0:13
into wedges.
0:15
I use baby carrots. Um, you can use just
0:18
standard carrots and cut them up into
0:20
small chunks, whichever you prefer.
0:23
Once you've done that, you can drizzle
0:25
with olive oil. Add a pinch of salt and
0:28
then put in the oven at about 180° for
0:32
45 to 50 minutes and just forget about
0:34
them. You don't even really need to
0:36
shake them. While that's cooking, you
0:39
can make your dressing, which is just a
0:41
tablespoon of honey, tablespoon of olive
0:43
oil, and 2 tbsp of lemon juice. Add a
0:47
touch of seasoning and mix together.
0:50
For the salad itself, I used two packs
0:52
of these ready to eat green lentils,
0:54
which are just so convenient. Then added
0:56
my roasted veg and my water crest and
0:59
gave that all a good mix together.
1:04
You can subwater crest for rocket if you
1:06
prefer that
1:08
or even some spinach or just lettuce
1:11
would work as well.
1:13
When that's mixed together, you are
1:15
ready to plate up. So, just put some big
1:18
spoonfuls of that salad on your plate,
1:21
drizzle with the dressing, and then
1:23
crumble over some goats cheese. What I
1:26
love most about this salad is that it is
1:28
great for meal prep once you've made it
1:30
at the start of the week. Keep it in the
1:33
fridge and have it cold throughout the
1:34
week. It works really, really well. And
1:37
that creamy goats cheese works so well
1:39
with the sweet veg and that slightly
1:42
sharp dressing. It's a joy.
