What is a Zodiac Constellation / Sign?

There are 88 officially recognised constellations in the night sky. There are twelve constellations that officially make up the Zodiac. What makes those constellations so special to be in a group of twelve or thirteen or even fourteen which some people say should be members of the Zodiac.
