These diminutive burgers are a favorite on the tailgating circuit, providing three or four bites of beefy bliss. While you could make them with pedestrian ground beef, using Kobe-style or Wagyu beef will ensure your sliders are luxuriant as well as ultra-juicy and flavorful.

Travel the world's barbecue trail and you will find burgers of every meat, shape, and size

from tiny sliders to jumbo pletzkevica. Here on Primal Grill, good things come in small packages
0:12
I give you Kobe beef sliders. Kobe beef originated in Kobe, Japan, where it's made from the Yugu breed of cattle
0:21
specially raised and fed a special diet. The result is beef of incredible richness with supernatural marbling
0:30
Now there are two ways to form the sliders. You can pat the meat out into a rectangle and cut it with a round cutter
0:41
Or use a slider press. Simply place the balls of meat in the slider press, which I've lined with plastic wrap
0:52
Press the top. And here are your sliders
1:02
Ready for grilling. I like to chill the meat for at least an hour
1:07
It help the sliders hold together better And whenever you handle raw beef you want to wash your hands with hot soapy water and use a hand sanitizer Okay let me show you how to prepare the caramelized shallots
1:22
A shallot is a member of the onion family. It has a more refined taste than an onion
1:28
And I preheated a cast iron skillet. Add a couple tablespoons of butter
1:35
and a little olive oil, which raises the burning point of the butter
1:42
Add the shallots to the melted butter and oil. And put the shallots back on the grill
1:52
Cook the shallots until caramelized a deep golden brown about 10 minutes
1:59
And add salt. And freshly ground. black pepper to taste. Meanwhile, I have melted some salted butter and what makes a
2:12
truly great slider is buttering and grilling the buns. Last step right before grilling
2:33
generously season your sliders with coarse sea salt and freshly ground black pepper
2:45
We'll arrange the sliders on the grill. Season side down. Once the sliders are on, you want to season the tubs
3:06
Cooking time is quick, three to four minutes per side. Meanwhile, let's grill the buns
3:18
Grill the buns until nicely toasted a couple of minutes. The perfect burger is a contrast in textures
3:25
the crunchy bun, the meaty burger, the soft caramelized shallots. All right, time to turn the sliders
3:36
Whenever grilling ground beef you want to cook it all the way through at least to 160 degrees And take off the grilled buns when golden brown
3:49
And now the sliders. I like to keep the seasoning really simple, salt and pepper
4:01
Top each slider with caramelized shallots
4:19
Finally, a pickle chip. Let's see how we did
4:35
Mmm, the sweet shallot, the tart pickles, when beef is this rich, you don't need to do a lot more
4:42
So there you have it, Kobe Beef Sliders, a primal grill twist on an American classic
