Welcome back. Today I am so excited to show you my vegan lasagna recipe because it is so good

This is the second video in my vegan Christmas series because what could be more Christmas dinner than lasagna

Now let's get started. I'm going to start by preheating my oven to 375 degrees and I'm going to

going to spray my casserole dish with some oil. I am making this lasagna with yellow squash

and carrots. I normally use zucchini and carrots but they were out of it at the store so

here we are. But you can also use other vegetables, you can use mushrooms. If you want a little bit

of a meatier flavor, lentils work really well for that. And honestly I've even made lasagna

half and half when I'm serving a lot of people with different tastes. So do you? Whatever

you choose, you're going to want about three cups of it in total. So if you're making lentils, it's gonna be about one cup of dry lentils

We'll give you three cups of cook lentils. Anyway, let's get on to preparing the veggies

My carrots are peeled and I just going to slice the carrots and the squash into slices that are about an eighth of an inch to a quarter of an inch thick If the pieces end up being too big then I just cut them in half or quarters so that they bite size

And my veggies are gonna go over into a sauce pan with some olive oil and I'll cook them over medium heat

I wanna cook them until the squash is starting to brown and the carrots are forked tender

which should take about 15 to 20 minutes. While I'm waiting for my veggies to finish

I am just going to start heating up my water for the lasagna in a big pot

Once the vegetables are done, I'm going to add 4.5 cups of marinera sauce and 1.5 tablespoons of brown sugar

And I'm just going to stir that until the sauce is warm and the sugar has dissolved

I would highly recommend that you use a really good high-quality sauce like rios because the flavor of the sauce really makes all the difference in the final dish

My water is boiling now. So I'm just going to add a box of lasagna noodles and cook them according to

to the package instructions. And to make things a little easier, I'm also gonna steam my spinach at the same time

So I have a five ounce bag of baby spinach that I have chopped up

and I'm just gonna add it to a sieve and let it sit over the top of the pot

until it is wilted and dark green. So it should take just a few minutes

Once my lasagna is cooked I gonna drain it And then I gonna lay it out on some parchment paper just because I don want it to get kinks or get stuck together So I have already prepared a batch

of my vegan ricotta here. I'll leave a link in the description below

so I'll leave a link for that video below as well. So I'm just gonna take my ricotta

and I'm going to mix in two teaspoons of flour, a teaspoon of pepper

and a teaspoon of onion powder. Once that's mixed up, then I'm gonna add

the steamed spinach and a cup of vegan mozzarella. Now the vegan mozzarella is optional

so you don't have to use it. I'm using Daya here, but I've also used By-Life

and Trader Joe's vegan mozzarella with good results. Okay, so we have our layers ready

Now we just have to put it all together. We're gonna start with our sauce and veggies

We're taking about one fifth of it, and we're spreading it along the bottom of the pan

And then we'll top that with three noodles, followed by a third of the ricotta mix

and another fifth of the sauce. And we will repeat that series twice more

So noodles, ricotta, sauce, noodles, ricotta, sauce. And then we finish it off with a top layer of noodles the rest of the sauce and some more vegan mozzarella I going to cover this with aluminum foil to bake it but first I going to

spray the foil with some oil to make sure the cheese doesn't stick. And then we'll just bake it
