Ingredients
1 pound Yukon Gold potatoes (shredded)
1 small onion (shredded)
1 large egg
2 tablespoons flour
1 teaspoon kosher salt (adjust to taste)
½ cup oil (avocado or light olive oil)
Instructions
Prepare the Potatoes and Onion:
Shred the potatoes and onion using a box grater or food processor.
Place the shredded potatoes and onion in a clean kitchen towel or cheesecloth and squeeze out as much moisture as possible.
Make the Latke Batter:
In a large bowl, combine the shredded potatoes and onion with the egg, flour, and salt. Mix well.
Fry the Latkes:
Heat the oil in a large skillet over medium-high heat.
Scoop about 2 tablespoons of the potato mixture into the skillet and flatten it with the back of a spoon to form a patty.
Fry until golden brown and crispy, about 3-4 minutes per side. Transfer to a paper towel-lined plate to drain excess oil.

Serve the latkes hot with applesauce or sour cream.
