Glazed Carrots
Ingredients:
2 pounds carrots (peeled and cut into sticks or coins)
¼ cup butter
¼ cup brown sugar (packed)
¼ teaspoon salt
⅛ teaspoon ground white pepper (optional)
1 tablespoon parsley (chopped, optional)
Instructions:
Cook the Carrots: Place the peeled and cut carrots in a large saucepan. Add enough water to cover the carrots and bring to a boil. Reduce the heat and simmer until the carrots are tender, about 8-10 minutes. Drain and set aside.
Make the Glaze: In the same saucepan, melt the butter over low heat. Stir in the brown sugar, salt, and white pepper until dissolved.
Glaze the Carrots: Add the cooked carrots back to the saucepan and toss until they are well-coated with the glaze. Cook and stir for an additional 1-3 minutes until the carrots are heated through and fully glazed.
Serve: Transfer the glazed carrots to a serving dish and sprinkle with chopped parsley if desired.
