hey guys it's danny now last week we
0:08
covered all the ins and outs of rhubarb
0:10
in my rhubarb 101 video so this week i
0:13
wanted to give you guys a way to use it
0:15
that would also be perfect for father's
0:18
day so for this quick bite i'm showing
0:20
you how to make my clean and delicious
0:23
rhubarb strawberry crisp so i've got the
0:26
oven preheating at 350° and we're going
0:28
to start with the filling now for those
0:31
of you who have never made a homemade
0:33
dessert before or think you can't bake
0:35
you want to start with a crisp because
0:36
it is truly one of the easiest desserts
0:38
you can make i've got two cups of
0:42
strawberries that i've sliced into
0:43
rounds get that into the bowl and you
0:45
could use any berry you want here
0:47
blackberries blueberries raspberries
0:49
pick a berry that excites you
0:52
four cups of frozen rhubarb that i
0:55
allowed to defrost at room temperature
0:57
and then i drained the excess water off
0:59
of it i'm going to get that in the bowl
1:02
now you could certainly make this with
1:03
fresh rhubarb and i have but i wanted to
1:06
use the frozen to remind you guys not to
1:08
forget about the freezer section for
1:10
both fruits and vegetables this is
1:12
produce that is picked at the top of its
1:14
season so technically it's seasonal it's
1:17
less expensive and it's super convenient
1:20
plus it's just a great thing to have on
1:22
hand for busy weekn night meals from
1:24
here we're going to toss in 2
1:26
tablebspoon of sugar it's a little
1:28
organic cane sugar and 2 tablebspoon of
1:32
white whole wheat flour give it a pinch
1:34
of kosher salt and then i'm just going
1:36
to get my hands in there toss all of
1:39
that together you want the strawberries
1:41
and the rhubarb to have a nice light
1:42
coating of the flour and the sugar once
1:45
you've got that done you're just going
1:46
to grab a 9 in pie pan that you've
1:49
either coated with a little cooking
1:51
spray or do what i've done and brush it
1:53
with a little bit of melted coconut oil
1:55
and just dump all your fruit right into
1:57
the pan
1:59
okay that's looking good i'm going to
2:01
set that aside and we're going to get
2:03
going on the topping to start you need 1
2:06
and 1/2 cups of rolled oats and you want
2:09
to make sure to get good oldfashioned
2:10
oats and not quickcooked oats just like
2:12
i have here to that i'm adding 1/3 of a
2:15
cup of wheat germ a teaspoon of groundup
2:18
cinnamon 1/4 cup of light brown sugar
2:21
absolutely necessary whenever you're
2:23
making a crisp 1/4 cup of real maple
2:25
syrup and you want to make sure that you
2:27
guys get the real deal 1/4 cup of melted
2:31
coconut oil and i love using the coconut
2:33
oil in a crisp because just like butter
2:35
it melts down when it's hot but then
2:37
when it cools it gets solid so it makes
2:40
the top of the crisp nice and crispy and
2:42
then finish that with 3/4 teaspoon of
2:44
kosher salt then just get your fingers
2:46
in there and start bringing everything
2:49
together until all the ingredients are
2:51
incorporated and all of your oats are
2:53
coated now because this dessert is best
2:56
fresh out of the oven what i like to do
2:58
if i'm not going to cook it right away
3:00
is just put a lid on it pop them in the
3:02
fridge for a couple hours and then about
3:04
an hour or so before you're ready to
3:05
give dad dessert you can pull it out and
3:09
assemble and to assemble it all you want
3:11
to do is grab the pie plate with all of
3:13
the fresh fruit in there and then just
3:16
spread the crisp topping all over the
3:18
top
3:20
and then just you know even it out make
3:22
sure everybody's covered cuz the best
3:24
part is the topping so you want
3:26
everybody to get a nice big bite of that
3:29
then you're just going to pop this into
3:31
the oven for 40 minutes now while that's
3:34
cooking i want to chat about dessert for
3:36
a minute because i've gotten a couple
3:38
emails from people asking me how often
3:40
is it okay to eat clean healthier
3:43
desserts so my thoughts here are one you
3:46
have to remember that dessert is dessert
3:47
even if it's packed with nutritious
3:49
ingredients i.e strawberries rhubarb
3:52
oatmeal at the end of the day dessert
3:54
promises one thing and that is a good
3:56
dose of sugar and sugar is definitely
3:58
something that we want to be keeping to
4:00
a minimum in our diets so you need to
4:02
look at how much sugar are you eating
4:04
throughout the day throughout the week
4:05
and remember sugar is also in bread
4:08
grains fruit and pay attention to that
4:11
and then gauge how does your body feel
4:13
my personal opinion save dessert for
4:16
celebrations and special occasions
4:18
always going to be the safest bet now
4:21
you'll know your crisp is done because
4:22
the fruit will be just slightly bubbling
4:25
right around the edges here and the top
4:27
will be this beautiful golden brown now
4:30
once your tart has cooled down just
4:32
enough to handle it you want to get on
4:33
in there and scoop yourself a nice
4:35
hearty serving
4:44
you got the sweetness from the
4:45
strawberries and then that tart rhubarb
4:48
all topped with that crispy sweet
4:50
crunchy topping match made in heaven
4:52
