### Instructions:
1. Bring a large pot of salted water to a boil. Cook spaghetti according to package instructions until al dente.
2. While the pasta is cooking, heat a large skillet over medium heat. Add the diced pancetta or guanciale and cook until crisp and golden, about 5-7 minutes.
3. In a bowl, whisk together the eggs, Pecorino Romano cheese, Parmesan cheese, and a generous amount of freshly ground black pepper.
4. When the pasta is done, reserve about a cup of pasta water, then drain the pasta and add it to the skillet with the pancetta. Toss to combine.
