How to make Tofu Scramble

Instructions: Begin by pressing the tofu to remove excess moisture. Wrap the block in a clean kitchen towel and place a weight on top for about 15 minutes. Once pressed, crumble the tofu into small pieces using your hands or a fork. Set aside. In a large skillet, heat the olive oil over medium heat. Add the diced onion and bell pepper, sautéing for about 5 minutes until softened. Add the minced garlic and cook for an additional minute. Stir in the crumbled tofu, turmeric, paprika, salt, and pepper. Cook for 5-7 minutes, stirring occasionally until the tofu is heated through and slightly golden. Add the fresh spinach and cook until wilted, about 2 minutes. Adjust seasoning as needed. Tofu scramble is a delicious and nutritious plant-based alternative to scrambled eggs, perfect for breakfast or brunch, and can be served with toast or wrapped in a tortilla!
