Smashed Potatoes Recipe π₯π§πΏ Ingredients π±π₯ 2 pounds small potatoes (baby Yukon gold or red potatoes work well) π₯ 3 tablespoons olive oil πΏ 3 cloves garlic, minced π§ 1 teaspoon dried rosemary πΏ 1 teaspoon dried thyme πΏ Salt and pepper, to taste π§πΏ Fresh parsley, chopped (optional, for garnish) πΏ Grated Parmesan cheese (optional) π§ Instructions πβ¨ Boil the Potatoes π₯π§ Place the potatoes in a large pot and cover them with cold water. Add a generous pinch of salt to the water. Bring to a boil over high heat, then reduce the heat and simmer until the potatoes are tender when pierced with a fork, about 15-20 minutes. Drain the potatoes and let them cool slightly.
