Eggplant Parmesan Recipe
Ingredients:
2 large eggplants, sliced into 1/4-inch rounds
Salt
2 cups breadcrumbs
1 cup grated Parmesan cheese
2 cups shredded mozzarella cheese
1/2 cup all-purpose flour
3 large eggs, beaten
3 cups marinara sauce
Fresh basil leaves, for garnish
Olive oil, for frying
Instructions:
Prepare the Eggplant:
Arrange the eggplant slices on a baking sheet and sprinkle them generously with salt. Let them sit for about 30 minutes to draw out excess moisture. Pat them dry with paper towels.
