1 whole chicken or 2-3 pounds of chicken parts (wings, legs, thighs, or carcasses)
- 2 large carrots, cut into chunks
- 2 celery stalks, cut into chunks
- 1 large onion, quartered
- 4 cloves garlic, peeled and smashed
- 2-3 sprigs fresh thyme (or 1 teaspoon dried thyme)
- 2-3 sprigs fresh parsley
- 1-2 bay leaves
- 1 teaspoon black peppercorns
- 1-2 teaspoons salt (to taste)
- 8-10 cups water
