**Ingredients:**
- 1 whole chicken or chicken carcass (about 3-4 pounds)
- 8 cups water (or enough to cover the chicken)
- 1 large onion, quartered
- 2 carrots, cut into large pieces
- 2 celery stalks, cut into large pieces
- 4 garlic cloves, smashed
- 2-3 bay leaves
- 1 teaspoon black peppercorns
- 1-2 sprigs fresh thyme (or 1/2 teaspoon dried thyme)
- Salt to taste
- Optional: fresh parsley, a few sprigs
