Carrot Cake - This recipe will drive you crazy! I have never eaten such a delicious carrot cake!

CARROT CAKE Ingredients: 2 cups all purpose flour 2 cups finely grated carrot 1 cup sugar 4 eggs 1½ tsp baking powder 1 tsp baking soda ½ tsp salt 1 cup oil 1 tbsp orange juice 3 tbsp orange zest For the icing: 2 cups mascarpone cheese 3 tbsp full fat greek yogurt 4-5 tbsp vanilla powdered sugar 1. In a bowl, mix flour, baking powder, baking soda, and salt using a whisk. 2. In another large bowl, mix the eggs with sugar until you get a frothy mixture. 3. Add the orange peel and orange juice and mix well.
