### Rib Roast
**Ingredients:**
- 1 rib roast (4-6 pounds)
- 4 cloves garlic, minced
- 2 tablespoons olive oil
- 1 tablespoon salt
- 1 tablespoon black pepper
- 1 tablespoon fresh rosemary, chopped
- 1 tablespoon fresh thyme, chopped
**Instructions:**
1. Preheat your oven to 450°F (230°C).
2. In a small bowl, mix together the garlic, olive oil, salt, pepper, rosemary, and thyme.
3. Rub the seasoning mixture all over the rib roast.
4. Place the roast on a rack in a roasting pan, fat side up.
5. Roast in the preheated oven for 15 minutes. Then reduce the oven temperature to 325°F (165°C) and continue to roast until the internal temperature reaches your desired doneness:
- Rare: 120-125°F (49-52°C)
- Medium Rare: 130-135°F (54-57°C)
- Medium: 140-145°F (60-63°C)
6. Remove the roast from the oven and let it rest for at least 15-20 minutes before carving.
