### Homemade Marshmallows
**Ingredients:**
- 3 packages unflavored gelatin
- 1 cup cold water, divided
- 1 1/2 cups granulated sugar
- 1 cup light corn syrup
- 1/4 teaspoon salt
- 1 tablespoon vanilla extract
- Confectioners’ sugar (powdered sugar) for dusting
**Instructions:**
1. **Prepare the gelatin:** In the bowl of a stand mixer, pour 1/2 cup of cold water. Sprinkle the gelatin over the water and let it sit while you prepare the sugar syrup.
2. **Make the sugar syrup:** In a medium saucepan, combine the remaining 1/2 cup of water, granulated sugar, corn syrup, and salt. Cook over medium heat, stirring until the sugar dissolves. Raise the heat to high and cook until the mixture reaches 240°F (115°C) on a candy thermometer.
3. **Combine and whip:** Carefully pour the hot sugar syrup into the gelatin mixture. Start the mixer on low speed and gradually increase to high. Beat the mixture on high for 10-12 minutes, until it becomes very thick and fluffy. Add the vanilla extract during the last minute of mixing.
4. **Pour and set:** Grease a 9x13-inch baking dish and dust it with confectioners’ sugar. Pour the marshmallow mixture into the dish, spreading it out evenly. Dust the top with more confectioners’ sugar.
5. **Let it set:** Allow the marshmallows to sit at room temperature for at least 4 hours, or overnight, until they are firm.
6. **Cut and coat:** Turn the marshmallows out onto a cutting board. Use a sharp knife or cookie cutters to cut them into squares or desired shapes. Toss the cut marshmallows in more confectioners’ sugar to prevent sticking.
