Here are all of my tips and tricks for
0:01
tiered cakes. Choose cake pans at least
0:03
2 in apart in size, for example, 8, 6,
0:06
and 4 in. For every upper tier, you'll
0:08
need an invisible cake board exactly the
0:10
same size as the cake, so it will
0:12
disappear from view once you stack the
0:13
cake. You'll layer the upper tiers on
0:15
their invisible cake boards. Layer your
0:17
bottom tier on a cake drum, which is
0:20
thicker and stronger than a cake board,
0:21
so it can support the weight of all the
0:23
tiers. Frost this bottom tier as normal,
0:25
starting with a crumb coat to trap any
0:27
crumbs that come off the cake and stop
0:29
them from getting into the visible final
0:31
layer of frosting. But, for the upper
0:33
tiers, before frosting, place a larger
0:35
cake board on the turntable with a
0:37
non-slip mat or ring of tape on top, and
0:40
then the cake on its invisible cake
0:41
board, so that you have the larger board
0:43
there to rest your cake scraper on while
0:45
you smooth the frosting. Keep that large
0:48
cake board and non-slip mat underneath
0:50
while you do the final layer of
0:51
frosting, too. That larger cake board
0:53
provides a flat surface to line your
0:55
cake scraper up straight, and also
0:57
prevents getting buttercream all over
0:58
your turntable. For the sharpest top
1:01
edges, after finishing the sides of your
1:03
cake, don't do the top yet. Put the cake
1:05
into the fridge for about 30 minutes
1:06
until the frosting is firm, and then dip
1:08
a knife into warm water, dry it off, and
1:10
cut around the top edge to create sharp
1:12
angles from the sides over onto the top
1:14
of the cake. To support the upper tiers,
1:17
I use boba straws as supports. You'll
1:19
cut these to the height of the bottom
1:20
tiers, four for each tier. You don't
1:22
need any for the top tier. Place the
1:24
cake pan of the next tier onto the tier
1:26
below and trace around it with a
1:28
toothpick.
1:29
To measure the boba straws, push one
1:31
into the cake until it hits the cake
1:32
board underneath. Pinch it at the top,
1:35
pull it out, and cut where you're
1:36
pinching it. Hold this against the other
1:38
three straws and cut them to the same
1:39
size. Push your four boba straws within
1:42
that circle you traced, and this way you
1:44
know they'll be sitting underneath the
1:45
next tier. Spread some buttercream on
1:47
top, which will act as glue once it sets
1:49
to hold the next tier in place so it
1:51
doesn't slide around when you transport
1:53
it. For the next tier, slide an offset
1:55
spatula underneath the invisible cake
1:57
board to separate the cake from the
1:58
larger cake board underneath and then
2:00
lift the cake up and center it on the
2:02
cake below. Cakes need to be
2:03
refrigerated before doing this so you
2:05
don't damage them when you pick them up
2:06
and move them around. Repeat that whole
2:08
process again for all of the upper
2:10
tiers. Here I'm adding supports to the
2:12
middle tier to hold up my top tier. The
2:14
middle and top tier need to be on their
2:16
invisible cake boards when you stack
2:18
them on the cake so that the support
2:19
straws below hold that up. Without the
2:22
invisible cake board, the top cake could
2:23
sink down onto the straws and squash the
2:26
cake below like this. Keep the cake in
2:28
the fridge until you transport it. Cold
2:30
cake and buttercream resist car
2:32
vibrations and sudden movements much
2:34
better than when they're at room
2:35
temperature. If your cake is too tall,
2:37
flip another box upside down and cut two
2:39
diagonal slits into one side and the
2:42
opposite side and then push the middle
2:43
flap inside the other box to raise this
2:46
box up like a very tall lid. Follow
