Lemon Infused Angel Food Cake Recipe
Ingredients: 1 cup cake flour, 1 1/2 cups granulated sugar, 12 large egg whites, 1 tsp cream of tartar, 1/4 tsp salt, 1 tbsp lemon zest, 1 tsp vanilla extract, 1/2 tsp lemon extract, 1 cup powdered sugar, 2 tbsp lemon juice. Instructions: Preheat oven to 350°F. Sift cake flour and 3/4 cup granulated sugar together. In a large bowl, beat egg whites with cream of tartar and salt until foamy. Gradually add remaining 3/4 cup granulated sugar, beating until soft peaks form. Add lemon zest, vanilla extract, and lemon extract, mixing gently. Fold in flour mixture in four parts, being careful not to deflate the batter. Spoon into an ungreased 10-inch tube pan. Bake for 35-40 minutes or until a toothpick comes out clean. Invert pan and cool completely. For glaze, whisk powdered sugar with lemon juice until smooth. Remove cake from pan by running a knife around edges. Place on a serving plate and drizzle glaze over top, letting it drip down sides. Let glaze set for 15 minutes before slicing. Serves 10-12.
