Cod, Potatoes and Peas - a 30 minute fish dinner

This dish has basically all of the

ingredients of fish chips and mushy peas

just re-imagined. You can decide if

you'd prefer it or not. Start with petta

and onions when it starts to get crisp.

Then you can pour in frozen peas and a

little bit of single cream and just put

that on a low heat and let those peas

come up to temperature and get really

really sweet and salty with that

panetta. That's your peas done. Then you

can move on to your potatoes. So just

boil up some baby potatoes for about 20

minutes.

When they're done, drain them. Add some

butter. Give it a bit of a toss around.

And then add parsley. Just a load of

chopped fresh parsley and that'll be

great. For your cod, salt it quite

heavily. And then melt some butter in

another frying pan. and cook your cod

for just a few minutes on each side

until lovely golden brown and flaky. To

plate it up, I like to start with my
