Ingredients 4 large egg whites: For making the meringue. 1 cup (200g) granulated sugar: To sweeten and stabilize the meringue. 1/4 teaspoon cream of tartar: Helps to stabilize the egg whites. 1 pint (450g) fresh strawberries: Sliced or halved. You can also use a mix of berries if desired. 2 tablespoons granulated sugar: For sweetening the strawberries. 1 cup (240ml) heavy cream: For whipping. 2 tablespoons powdered sugar: To sweeten the whipped cream. 1 teaspoon vanilla extract: Adds flavor to the cream. Instructions 1. Prepare the Meringue: Preheat your oven to 250°F (120°C). Line a baking sheet with parchment paper. Whisk the egg whites and cream of tartar in a large bowl until soft peaks form. Gradually add the granulated sugar, about a tablespoon at a time, while continuing to whisk until stiff, glossy peaks form. This step is crucial for a stable meringue. Spread the meringue onto the prepared baking sheet in a rough, uneven shape. It should be about 1/2 inch thick. Bake in the preheated oven for 1.5 to 2 hours, or until the meringue is dry and crisp. The center should be slightly chewy. Turn off the oven and let the meringue cool completely inside. 2. Prepare the Strawberries: Hull and slice the strawberries. If they are large, cut them into halves or quarters. Sprinkle the strawberries with 2 tablespoons of granulated sugar. Mix gently and let them sit for about 15 minutes to macerate and release their juices.
