I showed you the world's smallest burger, now the world's biggest burger
0:04
It's called Plezkeviza. And if you come from Serbia, Bosnia, Herzegovina, or elsewhere in the Balkans
0:10
it's the burger you dream about. This particular version starts with equal parts ground beef and ground pork
0:18
To them add finely chopped garlic, hot pepper. I'm using Anaheim chilies
0:26
finely chopped flat leaf parsley, and onion. Then add plenty of salt and plenty of freshly ground black pepper
0:41
Mix the ingredients until smooth, and I find the best tool for mixing is your fingers
0:48
The beef adds a meaty flavor, the pork adds richness. Sometimes Balkan Grillmasters will also use ground lamb or ground veal or even all four
1:00
So once the Plezkevice mixture is well blended, what you want to do is shape it into a large flat patty
1:09
on a piece of wax paper or parchment paper. Then place the second sheet on top
1:21
Then take the back of a knife and shape the plezkevica into a circular form
1:27
And chill it in the refrigerator. till grilling. Now gently loosen from the parchment paper and arrange them on the grill grate
1:55
You want a nice wide spatula for turning the pleatskavica when they're browned on the bottom
2:07
Once the plezkevizza's are nicely browned and cooked through, pull them to your cool
2:12
or safety zone. Then quickly toast the pita breads. Cooking time is really quick, a minute or two preside. side
2:31
With Plezkevica, you traditionally serve sliced tomato and lemon wedges
2:57
And a flat leaf parsley. Let's try it. We'll take a slice of pita
3:09
And a plezkevice. Mmm
3:21
This is unlike any burger you've ever tasted, unless you grill in the Balkans
3:25
So there you have it. Burger's big. We're grilling for a crowd on Primal Grill
