Ingredients: 1 lb (450g) shrimp, peeled and deveined 2 tbsp olive oil 3 garlic cloves, minced 1 small onion, diced 1 cup cherry tomatoes, halved 1 can (15 oz) white beans, drained and rinsed 2 cups low-sodium chicken or vegetable broth 1 lemon (zest and juice) 1 tsp smoked paprika ½ tsp red pepper flakes (optional) Salt and black pepper, to taste 2 cups baby spinach or kale Fresh parsley, for garnish Instructions: Sauté aromatics: Heat olive oil in a large pot over medium heat.
