Cauliflower burgers with cheddar

from Suus from Suzies Cheese Stories I got a nice piece of cheddar. You often think of that super yellowish / orange piece cheese what's on your burger. But nothing could be further from the truth in this case, because this is a vintage reserve cheddar. This cheese has been made since 1833 by the Barber Family in Somerset England. And there they developed a method that gives it a distinct texture, different from the other cheeses. This cheese is also soft and creamy and was a real surprise for me.
