A watermelon and a daikon radish had a baby…
and that baby grew up fabulous! 😍 Meet the watermelon radish.
Last week I mentioned the new Public Market in Redding and how we grabbed those tiny eggplants and a watermelon radish.
Have you ever seen one before? On the outside they look rather drab. Kind of a pale whitish-greenish color. But once you cut into it… cue the angels singing! ✨️💖 Bright neon pink and green and totally gorgeous.
They’re crunchy and I think they’re very mild tasting. Some people describe them as peppery, but the few times I’ve had them I’ve never experienced that typical radish bite. 🤔
You can use them to:
• add thin slices to salads or Buddha bowls
• top an Asian-style noodle dish
• top tacos
• layer in sandwiches
• pickle them
