Welcome back to Just Cook Damn It. Today I'm making my version of dirty rice
0:08
So let's get started. So here's your ingredients. You have your andouille sausage
0:14
a green pepper, celery, garlic. Baby, you can't go wrong with garlic. Garlic goes into anything if you ask me
0:25
Your white onions, your ground pork or ground beef, and some rice. You can't have dirty rice without rice
0:39
Here's your seasoning. You have creole, cayenne pepper, smoked paprika, salt and pepper, your chicken broth
0:50
So first you want to ground, good lord, ground. You want to brown your meat
0:58
Once it's browned, you want to place it on a plate with a paper towel
1:02
And in the same pan, you want to brown your andouille sausages
1:11
After that, in the same pan, of course, add in your green pepper, celery and onions
1:21
Cook this mixture until you see the onions turning a translucent color
1:30
And this tells you that it's time to go on and add that garlic, baby
1:46
Season it with your cayenne pepper, smoked paprika, salt and pepper
1:59
And mix it in well
2:21
Now you want to take and add back in your ground meat
2:28
Mix it in. Add in your washed rice. You have to wash rice
2:36
It's just a must
2:50
Mix that in well. Now you want to add in your chicken broth
3:00
And you want to turn this mixture on to a boil. Oh, I forgot to tell you to add in your bay leaves. Add two bay leaves
3:14
Two or three if you like. On top, make sure you bring this mixture to a boil
3:21
Once that's at a boil, you turn it down to a simmer. Place that lid on there and let this cook
3:31
About 20-25 minutes. And you should have this. Remove the bay leaves, of course
3:41
Add in your andouille sausages. Mix this in. And it's time to serve
3:53
This is what you should end up with. Take a little bit of green onions
3:57
Sit on top. And you just need a fork. Enjoy. Thank you for watching
