Folks, we are changing it up this week.
0:01
We're cooking up some wild game here at
0:03
the Lazy Tea Ranch in beautiful Wyoming.
0:09
And to start this process, I need you to
0:11
go to the creek first of all, dip the
0:13
water out, get that over on a hot fire,
0:15
get it to warming up. Now, drag out them
0:18
dried chilies. We're using a guilo
0:20
chili, a Hatch red New Mexico chili, and
0:23
we're using an ancho chili. Rough chop
0:24
you an onion. Throw it in there. Four
0:26
garlic cloves. Let's get it to simmering
0:28
along so it can get tender. When I'm
0:30
making chili, I'm going to start with
0:32
the two best cuts that I can find on
0:34
that backstrap tenderloin. I like to put
0:37
it in pretty good bite-sized pieces to
0:39
where it's about like so. I'm going to
0:42
season with our original and we'll give
0:44
it all a good coating. Then we'll toss
0:46
it about and we'll season some more. We
0:48
have to roast some tomatoes today. We're
0:50
just going to use a little Crisco cuz we
0:53
just want to get that meat to where it's
0:55
browned up, simmerred all, got a little
0:56
good sort of a caramelization on it.
0:59
Them chilies got good and tender over
1:00
there. Onion. We're just going to just
1:02
finely chop them. We can just go ahead
1:04
and put this in there right now. The
1:07
next part of this might be controversial
1:09
in a way. When I was raised, we were
1:11
really poor and beans went further than
1:13
meat. Kidney beans is my preferred
1:15
choice of bean if you're going to really
1:17
make chili with oregano. Next, we're
1:20
going to go with our chili seasoning.
1:21
Little black pepper. We're going to use
1:24
about that much beef broth. Then, we
1:26
want to let simmer about an hour and 45
1:28
to two hours or until that elk meat just
1:32
falls apart.

1:46
I'm going to take this bite right here.
1:48
M
1:51
I want you to try this because you told
1:53
me this is my good friend Houston
1:54
Johnson. So since you took that bite and
1:56
you know what happens at these videos,
1:58
that's the reason I called you up here,
1:59
Houston. We got to do a little dance.
2:01
There we go. Come on now. Give it Give
2:04
it all you got. Get in the water if you
2:05
want to, brother. There you go. Let
2:09
loose.
