Ingredients:
1 tablespoon olive oil
1 garlic clove, chopped
½ onion, chopped
200 grams frozen peas
300 milliliters chicken stock (or vegetable stock for a vegetarian option)
50 milliliters double cream
Salt and freshly ground black pepper, to taste
Mint leaves, for garnish (optional)
Instructions:
Heat the Oil: In a saucepan, heat the olive oil over medium heat.
Sauté the Aromatics: Add the chopped garlic and onion, and sauté for 3-4 minutes until softened.
Add Peas and Stock: Stir in the frozen peas and chicken stock. Bring to a boil, then reduce the heat and simmer for about 10 minutes.
Blend the Soup: Add the double cream and use a hand blender to puree the soup until smooth.
Season: Season with salt and freshly ground black pepper to taste.
Garnish and Serve: Garnish with mint leaves if desired, and serve hot.
