Ingredients
For the Macaron Shells:
100 grams egg whites (about 3 large eggs), at room temperature
140 grams almond flour (1 1/2 cups)
90 grams granulated sugar (just under 1/2 cup)
130 grams powdered sugar (1 cup)
1 teaspoon vanilla extract
1/4 teaspoon cream of tartar
Gel food coloring (optional)
For the Filling:
1 cup unsalted butter, softened
5 egg yolks
1/2 cup granulated sugar
1 teaspoon vanilla extract
3 tablespoons water
A pinch of salt
Instructions
Prepare the Macaron Shells:
Sift the almond flour and powdered sugar together into a bowl.
In a separate bowl, beat the egg whites until foamy. Add the cream of tartar and continue to beat until soft peaks form.
