Filipino Lumpia
Ingredients:
1 tablespoon vegetable oil
1 pound ground pork
½ cup chopped onion
2 cloves garlic, minced
½ cup minced carrots
½ cup shredded cabbage
½ cup chopped green onions
1 tablespoon soy sauce
30 lumpia wrappers
1 egg, beaten
Oil for frying
Instructions:
Prepare the Filling: Heat the vegetable oil in a large skillet over medium heat. Add the ground pork and cook until browned. Add the onion and garlic, and cook until the onion is translucent.
Add Vegetables: Stir in the carrots, cabbage, and green onions. Cook for a few more minutes until the vegetables are tender. Stir in the soy sauce and remove from heat. Let the mixture cool.
Assemble the Lumpia: Place a lumpia wrapper on a flat surface. Spoon about 2 tablespoons of the filling onto the wrapper. Fold the sides over the filling, then roll tightly. Seal the edge with a bit of the beaten egg. Repeat with the remaining wrappers and filling.
Fry the Lumpia: Heat oil in a deep fryer or large skillet to 350°F (175°C). Fry the lumpia in batches until golden brown and crispy, about 3-4 minutes per batch. Drain on paper towels.
Serve: Serve hot with sweet chili sauce or your favorite dipping sauce.
