Ingredients: 5 cups sliced fresh mushrooms (button, cremini, or a mix) 1½ cups chicken broth ½ cup chopped onion ⅛ teaspoon dried thyme 3 tablespoons butter 3 tablespoons all-purpose flour ¼ teaspoon salt ¼ teaspoon ground black pepper 1 cup half-and-half 1 tablespoon sherry (optional) Instructions: Cook the Mushrooms: In a large saucepan, combine the mushrooms, chicken broth, onion, and thyme. Bring to a simmer and cook until the vegetables are tender, about 10-15 minutes. Blend the Mixture: Carefully transfer the hot mixture to a blender or food processor. Blend until creamy but still with some chunks of vegetables. Make the Roux: In the same saucepan, melt the butter over medium heat.
