
Coconut shrimp recipe

Ingredients:
1 pound large raw shrimp (peeled and deveined, tails on)
1/2 cup all-purpose flour
1/2 teaspoon salt
1/2 teaspoon black pepper
2 large eggs
1 cup sweetened shredded coconut
1 cup panko breadcrumbs
Vegetable oil (for frying)
Instructions:
Prepare the Shrimp:
Pat the shrimp dry with paper towels.
In a shallow bowl, mix the flour, salt, and pepper.
In another bowl, beat the eggs.
In a third bowl, combine the shredded coconut and panko breadcrumbs.
Coat the Shrimp:
Dredge each shrimp in the flour mixture, shaking off any excess.
Dip the shrimp into the beaten eggs, then coat with the coconut-panko mixture, pressing gently to adhere.
Fry the Shrimp:
Heat about 1/2 inch of vegetable oil in a large skillet over medium-high heat.
